So I could have sworn someone once told me of a place in teh Chicago area that sold previous model home furniutre. ANyone know of such a place??
Locally here the store's name is "Cort". I'm not sure if they are a national franchise.

I'll second the mention of Cort. I've had good experiences with their furniture.
Most display homes rent the furniture so try rental companies. Not the rent to own ones but high end, temp places. I am sure a realtor could give you a list since they are the same companies they use to fill a sale home when the people have already moved.
Just be aware that some of the furniture used to stage is created for that only -- staging -- and as such, is made quite shoddily with no comfort or durability in mind, or needed, really. A home stager once gave me this tip :)
