Ksground Chicken Recipe, Different and Yummy?

Hi ladies! TGIF...I have ground chicken defrosting for dinner tonight.

We had turkey burgers a few nights ago so I don't want to make burgers with it.

I've done meatballs with it before, not in the mood for spaghetti and meatballs.

I do have ingredients for chili but that can be boring...

Anyone have any yummy and different recipes? (Still kid friendly).

I don't have potatoes in the house. I do have couscous, pasta, rice.

Try at Chicken Meatloaf with it - It's Chicken so a Tangy "Asian" theme could be fun depending on what veggies/flavors/sauces you have. Or you could do a "standard" meatloaf just with chicken vs red meat much like you would meatballs. I would serve WITH roasted veggies on the side.

My family likes spicy Indian patties. You sautee onion, garlic, and ginger. Add some red or yellow curry and garam masala if you have it. You can add more hot pepper if you family likes that. Add some chopped cilantro if you have it and salt and pepper. Mix it together and form into patties. You can pan fry then in som olive oil or grill them. They are really yummy!

this is my very own recipe for 'TurkeyRoni' (instead of Beefaroni) but you could substitute ground chicken. I don't eat beef so I substitute poultry all the time. This is yummy and just one pot.
1lb. ground turkey (or chicken)
1 can tomato sauce (or 2 cups crushed tomatoes)
1 can diced tomatoes (drained)
2 cups dry macaroni
1/2 tsp. oregano
1 tbsp. sugar
2 tbsp. tomato paste
1/4 tsp. garlic salt powder
2 cups hot water
1 cup shredded cheddar cheese
1/4 cup romano or parmesean cheese

In a large pot (I use a dutch over)
1. cook turkey (or chicken) and drain meat
2. Add macaroni, tomatoes, tomato sause, water and seasonings
3. Bring to a boil, then cover and let simmer until noodles are tender and liquid is absorbed (about 20-25 minutes)
4. Remove from heat and stir in cheeses

We LOVE this recipe! I wanted something that was one pot, and had added veggies so I took a little of this recipe, a little of that and added stuff along the way. (I must admit, I am so proud of myself for this). Sometimes I will add canned carrots cut up small for some added veggies. You can add or substitute whatever you want. You just need the macaroni to water ratio. I added the tomato paste in there not too long ago to give it a little more tomato flavor. You could always do without the cheese if you wanted something a bit lighter.

I like to create new recipes and tried this the other night.

1 lb ground turkey
add some diced celery and onion
season with salt-pepper-garlic powder-poultry seasoning-and ground bay leaf
peel and cut up a sweet potato (small pieces)
add a handful or two of dried cranberries

Let this cook until all ingredients are done.
add a can of condensed Cream of Mushroom soup (I normally don't cook with canned soups but this was low sodium and MSG free)
add about 1 cup cooked rice

It turned out really yummy the sweet potatoes and cranberries made it a bit sweet but still really good. You can adjust this and stretch the meat by adding a little milk and more rice or another veggie.

You could try the following link with ground chicken. We had this with diced
chicken the other night and it was yummy. My six year old inhaled his. We added a cup of salsa to the broth/sour cream mixture.

Couldn't you treat it like hamburger, and throw it in one of the hamburger helper boxes?

As a side note, and if you happen to be store bound anyway, they do have "Chicken Helper" boxes now....

Or just add it to some mac and cheese.
