okay, so my hubby is the chef in our house, literally...he was a chef for 3 years on small yacht cruise ships. I can cook, some things better than others, but to be honest, i'm really not the greatest cook. I have hamburger thawing for dinner tonight...I usually either do spaghetti, meatloaf or tacos or enchiladas with hamburger, I dont really have any other ideas....so, all you wonderful mama's out there who are such culinary masters, HELP PLEASE!!! what else can i make with the hamburger??? it is a big package so i could use it all or half, whatever a recipe may call for. TIA

@ Jo W.>>> if i made cabbage rolls for my husband i think he would literally bow down and kiss the ground i walked on!!! LOL, he is from Romania, his family moved to the states when he was 3 years old, and cabbage rolls is like a main stapple for them, that and soup!!!

Shepherd's Pie is the British answer to "Let's clean out the fridge!"

Basic components are:
Usually some sort of beef (ground beef is fine) with a brown gravy mixed with vegetables in a casserole dish
Cover the top with mashed potatoes
I sprinkle cheese over top and bake to make a nice, golden-brown "crust"

Think "pot pie" with mashed potatoes instead of pie crust.

LOL those are the 'standard' things I do w/ hamburger too!!
you could makes Stuffed peppers !! YUM
or silly as it sounds, hamburgers on the grill, but make them 'ranch burgers', or bacon cheese burgers, black n blue burgers !
Now I want MEAT ! haha

Ever made cabbage rolls? Yummy!

I can message you the recipe when I get home. They are not hard to make. I got the recipe from a cookbook put out by the Lebanese church here. Sweet mother I could get soooo fat on those.

I also have a good recipe for Lebanese bread, manna from heaven I tell ya.

Hamburger Stroganoff (I love this over rice)

Ingredients
1 pound ground beef
1/4 cup chopped onion
1 garlic clove, minced
1 (10.5 ounce) can condensed beef consomme, undiluted
8 ounces of fresh mushrooms, sliced
3 tablespoons lemon juice
1/4 teaspoon pepper
ADDITIONAL INGREDIENTS (for each dish):
2 cups cooked spiral pasta (or cooked rice)
1/2 cup sour cream
2 tablespoons water

Directions
1. In a skillet over medium heat, cook beef, onion and garlic until meat is no longer pink; drain. (Drain into a pyrex measuring cup and place in the frig. In 10-20 minutes the fat will have congealed. Take it out with a fork and put the juice back into your mixture.) Stir in consomme, mushrooms, lemon juice and pepper. Place half of the mixture in a freezer container; cover and freeze for up to 3 months. To the remaining meat mixture, add pasta or rice, sour cream and water; heat through (do not boil). To use frozen meat mixture: Thaw in a saucepan or skillet and prepare as directed.

You could make homemade salsbury steak. I make seasoned hamburger patties. Cook in a big skillet, remove, but leave the drippings in the pan. I add raw sliced onions to the pan and cook on med low until they start to soften, then I add a ton of sliced mushrooms to the pan and turn it up to high heat. Remove when mushrooms start to soften. Then add worcestshire, and red or white wine to the pan. Cook until the wine has reduced. Make a slurry of flour and water or cornstarch and water. Add to the pan to make your gravy. Add meat, mushrooms, and onions back to the pan. Serve over butter noodles, mashed potatoes, or rice.

Or short cut - cook patties and mushrooms, add a can of brown gravy and call it dinner!

I have a great recipe for something called Zesty Crescent Casserole. It's basically layers of ground beef and onions, tomato/spaghetti sauce, cheese and those canned crescent rolls. If this sounds like something your family might like, I can type up the recipe for you.

For those who are interested, here's the recipe:
1 lb ground beef
1/4 c chopped onion
1 envelope spaghetti sauce mix
1 1/2 c shredded mozzerella cheese
8 oz can tomato sauce
1/2 c dairy sour cream (I use the low-fat variety)
8 oz can Pillsbury crescent rolls (also use the low-fat ones here)
1/3 c grated Parmesan cheese
2 tbsp butter or margarine, melted

Heat oven to 375
In a frypan, brown beef and onions, drain. Stir in sauce mix and tom sauce; heat until hot and bubbly
Combine cheese and sour cream.
Pour hot meat mix into ungreased 13x9 baking dish. Spoon cheese mixture over meat.
Separate crescent dough into two rectangles. Place over cheese mixture. Combine Parmesan cheese and margarine and crumble/spread evenly over dough.
Bake at 375 for 18-25 minutes or until deep golden brown

To reheat: Cover loosely with foil and heat at 375 for 12-15 minutes.

*Baked ziti with meat - YUM. I make this all the time and put my own spin on it (garlic, etc). Easy, and the fam loves it. Makes a ton.

*Spice up your burger - add a little A1 and onion soup mix and a little water. Or, add a packet of dry Ranch dressing mix. Or, mix in some blue cheese crumbles. Top with tomato, avocado slices and raw onion. Serve on an onion roll and with sweet potato fries (you can buy these in freezer section or make them).

*Meatball sandwhiches - get some parsley, breadcrumbs, parm cheese, etc. Make the meatballs yourself (really easy, I can send recipe) and put on toasted hoagie roll with melted cheese and marinara sauce. YUM!!

I make buffalo meatloaf. The kids may not like it cause its spicy. I do hamburger mix it like a meatloaf then add in some crumbled blue cheese. I mix in some buffalo wing sauce. Once it is in the pan I put some wing sauce across the top and cook it like you do regular meatloaf. Sometimes I mix ground turkey and regular hamburger meat. Good luck

Sloppy joes, shepards pie, I make stuffed cabbage in the crock pot very easy, go to allrecipes.com and put hamburg in as an ingredient and you'll probably get even more ideas

PM me for the recipe. You need some onion, maybe jalepeno, some frozen corn and/or a can of green beans, and everything you'd put in your mashed potatoes. Also, a packet or two of brown gravy.

We LOVE it. And there are various ways to make it. To me, the gravy on top makes it super-yummy.

Edit to your question:
In a 9x13 pan, put the cooked ground beef with some of the juice (hopefully you cooked it with onion and/or jalepeno). On top of that, add a layer of frozen corn and a can of french-style green beans. On top of that, add a layer of mashed potatoes (we put Ranch, salt, pepper, butter, cheese in our mashed potatoes). Put in the oven and cook till hot. Make brown gravy packet (2 cups) and pour on top of each person's bowl. Add fresh ground pepper.

I'm no culinary master - however, I love to cook!!!!

ooohhhh meatloaf - mexican style...

Fritos - or corn chips - crushed
Salsa (some for the mixture) (maybe a cup 1/2 for mixture)
Cheese (some for the mixture) (maybe a cup again - 1/2 for mixture)

mix it together. then top with leftover salsa and cheese and bake for 30 to 35 minutes...

i would serve with Spanish Rice and corn...

Enchiladas...yummy - serve with gucuamole and chips...Spanish rice...

Spaghetti - make your own meatballs - italian bread seasoning/crumbs - make into small balls and cook then add to sauce (diced tomatoes, tomato paste, tomato sauce, garlic, basil, oregano, onion, mushroom, olives, bell peppers (what we call a garbage sauce)....

Give me a few minutes and i'll think of some more!!

I have a Mexican casserole that I do as an old stand by.
1 lb ground beef
1 med onion finely chopped
2 cloves grated garlic
1 can cream of chicken soup
1 can ranch style beans
1 can rotel tomatoes
1 small bag fritos crushed
Cheese
Brown garlic and onions add meat and brown. Add beans, soup, and rotel heat through
Preheat oven to 350
Layer crushed fritos with meat mixture and bake for 35 min
top with cheese and bake until melted.
I ususally serve with a salad.

Empanadas! My favorite recipe is from Real Simple, but you can literally use anything in the "mix" you want... we like green olives and golden raisins. Use premade dough and sour cream with lime zest as a dip!

I saw this yesterday at noon on Foodnetwork and I made yesterday evening for dinner and it was a hit !!! Something else to do with Ground meats !!

Chopped Steak and Mushroom Onion Gravy

Ingredients
Steak:
1 1/2 pounds ground beef sirloin
1 egg, lightly beaten
1 tablespoon Worcestershire sauce
1 shallot, finely chopped
1 clove garlic, finely chopped
3 tablespoons finely chopped parsley leaves
1/2 teaspoon ground mustard
2 tablespoons panko bread crumbs
1/4 cup all-purpose flour
Kosher salt and freshly ground pepper
1 tablespoon canola oil
1 tablespoon butter
Gravy:
2 tablespoons butter
8 ounces crimini mushrooms, cleaned well and quartered
1 small onion, minced
1 teaspoon finely chopped thyme leaves
Salt and freshly ground black pepper
1/4 cup all-purpose flour
1/2 cup brandy
2 cups low-sodium beef stock
Directions
Preheat the oven to 350 degrees F.

Combine the ground beef, egg, Worcestershire, shallots, garlic, parsley, ground mustard, bread crumbs, flour, and salt and pepper, to taste, in a large bowl. Shape the mixture into 6 equal-sized oval patties and set aside on a plate.

Heat a large frying pan over medium heat and add the canola oil and butter. When the butter foams add the patties and brown, about 3 to 4 minutes per side. Transfer the patties to a 13 by 9-inch baking dish. Drain all of the fat from the pan but leave any browned bits.

Return the pan to medium heat and melt the butter for the gravy. Add the mushrooms, onion, and thyme and season with salt and freshly ground black pepper, to taste. Cook, stirring rarely, until the mushrooms are slightly browned and soft, about 4 minutes. Sprinkle in the flour and mix until fully incorporated. Stir occasionally, until the flour is lightly toasted, about 3 minutes. Add the brandy and stir, scraping up any browned bits from the bottom of the pan. Slowly pour in the stock and stir until smooth. Let the mixture come to a boil and cook until sauce is reduced and thickened, about 8 minutes.

Taste and add salt and freshly ground black pepper, if needed. Lots of pepper is good in this dish! Pour the sauce over the patties in the baking dish and cover with aluminum foil. Bake until the meat is tender and slightly pink in the middle, about 20 minutes. Remove the dish from the oven and serve.

And I made this suggested side dish OMG soo good !!!

Mashed Cauliflower and Cheese

Ingredients
1 large head cauliflower, finely chopped (about 2 pounds)
1 cup chicken stock
2 tablespoons roasted garlic
Kosher salt and freshly ground black pepper
1/4 cup whole milk
1 cup shredded sharp Cheddar
1/4 cup reduced fat sour cream
2 tablespoons chopped chives
Directions
Add the cauliflower to a medium-sized saucepan along with the chicken stock. Bring to a simmer over medium-high heat and cook until tender, about 8 to 10 minutes. Add the roasted garlic and season with salt and pepper, to taste. Stir in the milk and puree with an immersion blender until smooth. Mix in the cheese and taste for seasoning. Transfer the mixture to a serving bowl and garnish with sour cream and chives.

Let me preface this by saying I am not a culinary master by any stretch of the imagination, but I have a couple of recipes I make that my family seems to enjoy:
Shepard's Pie
1 lb. ground beef
1 frozen pre-made pie crust
instant sour cream and chive potatoes
1 packet gravy
can of mushrooms (optional)
Shredded cheese (any variety, optional)

Bake the pie crust at 400 degrees for 16 minutes or until golden brown. Prick it with a fork before baking to avoid those large bubbles. Brown the beef and add mushrooms. Make potatoes and gravy according to package directions. Add gravy to beef and mushrooms. Pour beef mixture into bottom of pie. Pour potatoes over top. Sprinkle cheese on top.
I served a vegetable on the side with it.

Mexican Pizza
2 frozen pre-made pie crust
1 lb. ground beef
8 oz. sour cream
1 can refried beans
1 head of lettuce (any variety)
1 can rotel tomatoes or fresh tomatoes chopped
1 package of shredded cheese

Bake pie crusts at 400 degrees for 16 minutes (each). Prick crust with fork to avoid bubbling. Brown ground beef. Warm refried beans according to directions. Chop lettuce. I mix the ground beef and refried beans together, but you can do this separately. Pour into pie crust. Add sour cream on top, then lettuce, tomatoes and cheese. Yummy!

Goulash is pretty quick and easy, several recipes out there, but here is mine. (I don't exactly follow a recipe, just throw stuff together in a large skillet)

Brown hamburger, drain grease. When cooked throw in chopped onion and green pepper and saute til partially cooked. Season with salt, pepper, add canned or fresh tomatoes chopped up with juice. May need to add can of tomato sauce and water.
Add cup of macaroni (measured dry) and then cook separately, drain and add the cooked macaroni to the skillet of meat.
I season liberally to taste, using chilli powder, or spices like oregano, basil, thyme, (fresh is good). Sometimes I add a little brown sugar to the mixture to improve taste.
Really ok to be creative. I have also added ketchup or barbecue sauce. Experiment with flavors.
For side dish, green beans, corn on cob. Green salad, or slaw, Mashed potatoes.

A similar hamburger dish (one skillet meal basically)
Zucchini casserole:
4 slices bacon 1 1/2 tsp. salt
1/4 c. chopped onion 1/8 tsp oregano
1/4 c. chopped celery 1/4 tsp ground black pepper
1/4 c. chopped green pepper 1/8 tsp thyme
2 cups cubed/diced zucchini 1 cup grated cheddar cheese
2 cups fresh or canned tomatoes
fry bacon-crisp, remove, then saute onion, green pepper, celery about 3 minutes. Add 1 cup uncooked macaroni, stir to coat in drippings.
Add zucchini, tomatoes and spices, cover and simmer until macaroni is done (about 25 min over low heat) (You may have to add a little water or tomato juice depending how thick/thin you want it). I usually add 1 or 2 teaspoons of brown sugar to the mixture.
Just before serving, add cheese and bacon crumbled on top.

This entire casserole can be stretched by adding cooked hamburger to the mixture and recipe easily enlarged by adding more ingredients.
Easy for 'non-cooks'. Can't really mess it up and it is tasty!

Well, I do the usual, spaghetti, meatloaf, taco salad, I mix it in with red or black beans and rice, but I use a lot of the recipes from Pampered Chef. They use like biscuits, or bread dough and stuff the meat and cheese in them... There was a western one, and then mexican.... but it makes them different. I have all the cookbooks and can get to the recipes.... contact me if you want some of them... ohhh yes when I do hamburgers I stuff them with cheese on the insided to give them a different feel.

You might not be old enough to remember this.. Campbells soup used to have a soup called noodles & ground beef. It was noodles with bits of hamburger, very small diced carrots, and little bits of diced tomatoes in it. Spice wise I believe that garlic, onion, and whatever you like is good. The way they did it, it was mostly noodles and they mixed a fat kind with a skinny kind. I loved it so much as a kid.
