I know there are great cooks out there. I need a receipe for chicken salad sandwiches. Can you please

Sonoma Chicken Salad

Got lots of compliments on it from my mom, and that meant it was really good--her family are fabulous cooks and my grandpa was a caterer.

I boil a whole chicken. (Freeze the broth for future cooking.) Cook it until it is falling off the bone, then cut the rest off. Mix in a large mixing bowl (with your hands) with salt, pepper, mustard, dressing (I'm a Miracle Whip girl; some like mayo.), sweet pickle relish, tarragon, basil, boiled egg. All of this is to taste, so no measurements. I really enjoy eating it while the chicken is still warm.

ETA: Oh, I forgot about the celery.

I like that food processor idea, making it more like a spread. Maybe Ill try that at some point.

this is my favorite chicken salad EVER, its made with quinoa(pronounced keen-WAH), which is this grain that is super good for you. try it if you're adventurous!

While I love chicken salad with grapes or celery I also like to make a really basic one where the chicken really shines. It seems so simplistic that it's boring, but really, it's the one my kids and my nieces beg me to make.

I like to throw a couple of extra boneless skinless chicken thighs and breasts on the grill to set aside for chicken salad simply seasoned with garlic salt (Costco has a great blend in a grinder - big pieces of dried garlic and coarse salt) and pepper. If I want a jazzier salad I use one of the rubs we have around and then grill. The chicken can be made into salad later in the week or put in the freezer for later.

Or, if I'm doing an olive oil and rosemary roasted chicken I get a really big one to use the left-overs for chicken salad. In either case I really like to use a blend of white and dark meat - gives it better flavor.

I cut the pieces very chunky, then keep the salad super simple - some yummy diced red onions, slice some canned black olives and just add enough mayo to hold it together, little salt and pepper. If I have used a rub on grilled pieces then I sprinkle a little of the rub in as I mix it up too.

I've used this on pieces of crunchy bread as appetizers at parties - also good on sourdough or pumpernickel bread - YUM!

My favorite chicken salad is:

2 whole chicken breasts, poached and cut into bite-sized cubes
2-3 ribs celery chopped
1 cup red grapes, halved
1 cup toasted pecans
2 tablespoons chopped fresh tarragon leaves
1/4 good mayo
1/4 sour cream
salt and pepper to taste

Put it all in a bowl and mix until its evenly coated.

It keeps for about a week in the fridge. Even my husband, who won't eat any other chicken salad loves this.

This is my grandmothers.
cooked chicked
ranch dressing (hidden valley)
miracle whip
diced raw carrots, celery and onions
put in a food processor and mix ( all the pieces will be very very small...like a patte)

My favorite chicken salad is:

2 whole chicken breasts, poached and cut into bite-sized cubes
2-3 ribs celery thinly sliced
1/2 medium sweet onion, diced
1 cup red grapes, quartered
1/2 cup diced red delicious apple
1/2 cup diced granny smith apple
1 cup chopped walnuts
3/4 c Hellman's or Kraft REAL mayo
salt and pepper to taste

Put it all in a bowl and mix until its evenly coated.

I make my chicken salad with a packet of dry hidden valley ranch, a cooked chicken (can be store bought)and pulled or cut into pieces, red grapes cut in half, a small onion, celery, walnuts and mayo till it gets to the thickness you like it! It's easy and wonderful!

I make mine with cooked chicken, slivered almonds, grapes cut in 1/2, and a 50/50 mixture of Hidden Valley Ranch Honey Dijon dressing and fat free yogurt or sour cream. Serve in a pita with a slice of mild cheese like havarti and some sprouts....yummo!

Rotisserie lemon pepper chicken, grapes cut in half, mayo, a small spoon of Dijon mustard and a tablespoon of diced fresh tarragon. Its amazing.
