I don't really use a recipe so I don't have exact measurements but here goes. I make my red potato salad with the skins on- I boil the potatoes whole and then cut them up and let cool. In the meantime mix together- Mayo and RANCH dressing (don't go generic)- I would say I do about a 70/30 mix- more ranch! Just depends on how tangy you want it-the more mayo the less tangy. Chop about 1/2 a large purple onion and add to dressing. Then add in your standard dose of pickle relish, 1 boiled egg chopped and salt and pepper. Sometimes I also add fresh bacon bits and/or celery as well. This is a sure win with the kids. What kid do you do know that doesn't like Ranch dressing?

I also use this recipe with regular potatoes but I peel them.

This Recipe gets rave reviews wherever I go. To save time, I cut up the raw potatoes into bite-sized pieces and boil them that way (just be sure not to over-cook them, I stick a knife or fork in to test doneness after about 10 min).

I also eyeball everything: Mayo, dill (dried or fresh), onion powder, garlic powder, chopped green onions, 3 eggs chopped up, and bacon bits when I have them, minced dill pickle, then my SECRET ingredient is a dash pickle juice.

I make one, but eyeball the proportions. I boil the potatoes, let them cool, and cut them into bite-sized pieces. I mix this with celery, green onion, drained green olives with pimento, crumbled bacon (I use turkey bacon), salt, pepper, paprika. I despise eggs, but my grandmother's original recipe includes egg. Mix all ingrediets with real mayo (insisted upon by my grandmother)

I made one last week...a copy of the Red Hot and Blue recipe. I dont' have measurements but here are the ingrediants: red potatoes(boiled whole then cut up with skin on); Mayo; celery seed(not much); hard boiled eggs cut up(just the whites); finely diced onion; salt and pepper to taste.
It's great served warm!

This one has a little of a crunch to it and may not be very healty but is good.
4 servings

4 strips of bacon
1 pound small red potatoes, unpeeled
1 green onion slicecd
1 boiled egg, chopped
2 small pickles, chopped
1/4 cup mayo
2 teaspoon Dijon mustard
paprika, salt and pepper to taste

cook bacon until crispy- soak off the grease and set aside.
Put whole potatoes into cold water with a tablespoon of the bacon grease and boil until potatoes are tender. drain and cool to cut into bite-size.
Mix mayo, mustard, salt, pepper, paprika, pickles, onion, and eggs. Add potatoes and crumble the bacon-- mix.
Depending on how big the potatoes are You may have have to adjust the amount of everything you put in.
I have been making this so long that I just add to taste.
enjoy!
