CHICKEN WALDORF

1 c. mayonnaise or salad dressing
1 tbsp. Dijon mustard
1 tbsp. brown sugar
5 c. cubed cooked chicken or turkey
2 lg. apples, chopped
1 c. thinly sliced celery
1/2 c. chopped walnuts
1/4 c. raisins

In bowl stir together mayonnaise, mustard and brown sugar. Fold in cubed chicken, apples, celery, walnuts and raisins. Mix well. Refrigerate for 2-6 hours.
(I'm sure you can omit the raisins because some people either love them or hate them in certain foods!)

2 cups diced cooked chicken
1 hard-boiled egg, finely chopped
1/2 cup chopped celery
1/2 cup chopped onions
1 tablespoon minced garlic
3 tablespoons Creole or whole-grain mustard
1/2 teaspoon freshly ground black pepper
1/2 teaspoon salt
1/2 cup mayo

1. Combine the chicken, egg, celery, and onions.
2. Mix together the garlic, mustard, pepper, salt, and mayo in
a serving bowl.
3. Add to the chicken misture and mix well. Refrigerate for at
least one hour.
4. Serve chilled.

I know it might sound like a little much but once you get the hang of it, it is super easy. And once you try this Chicken Salad you'll never want another kind! Good Luck!

chicken
boil a whole chicken with 1 sliced onion, and 2 bayleaves.

shred chicken in food processor.
add mayo, salt, pepper, and hard boiled egg whites.

using a whole chicken as opposed to just breasts makes it less dry.

tuna
mix tuna with 4oz cream cheese and finely diced onions, salt and pepper.

using cream cheese makes it less watery, more creamier and richer than mayo.

Mine is pretty simple...can tuna (in water, not oil), diced red onion, diced pickle, little bit of mayo & mustard mixed in, dash of garlic salt/pepper. Its simple but yummy!

I have one that I always get many compliments on and people are always asking me for the recipe. It's pretty easy as well!

Ingredients:

*Approx 8 frozen chicken breasts
(I usually just buy the big bag of frozen tyson chicken breasts and that has about 8 in it.)
*6 large eggs
*3 stalks of celery
*1 small jar of sweet pickle relish
*large jar of miracle whip salad dressing

 Boil: frozen chicken breasts for 1 hour then squeeze the water out of them and shred.
 Hard boil eggs then shell and chop
 Chop 3 stalks of celery
 Put all of the above in a large bowl
 Add 1 small jar or sweet pickle relish
 Add miracle whip until moist (usually a little more than half the large jar)

(If you want to make a larger bowl of it…buy the bag of frozen chicken breast from Sam’s it has a few more chicken breast in it. Then add two more eggs and one more stalk of celery and more mayo)

Also a tip... If you have one I use the Pampered Chef Chopper to chop the egss and especially the celery. I chop it really fine so you hardly notice it's there, becuase my five year old claims she doesn't like celery, but she LOVES the chicken salad!!!
