Cheese Fondue Recipe?

We are hosting another couple on NYE, and I decided I want to do fondue after the kiddos go to bed. We're going to do 1 course with cheese, 1 with peanut oil, and 1 with chocolate. I've never done this at my house before (have at friends' houses and the melting pot) and am wondering if anyone has a fairly simple cheese recipe? I have a chocolate recipe, but no cheese. I know I could search online but it's always nice to hear what has worked for others. Any other must-know tips for this type of gathering? Thanks so much in advance!

This is my favorite cheese fondue. You have to follow the instructions carefully in regard to melting the cheese slowly if you want smooth fondue.

Yes, I do, but I need to go get it. I just use the one that came with the fondue pot and have always had good luck with it. However, it uses white wine as the base. I think all of the alcohol cooks off, but is that o.k.? There might be an alternative. My husband and I have cheese fondue every year for NYE. The kids have steak and chocolate fondue. Depending on how many people you have it can be best to have more than one pot for each course. Have separate utensils and plates for eating so people aren't eating off of the forks that go into the pot. Seems obvious, but it happens. I'll get back to you with the recipe.

Recipe:
1 garlic clove, halved
1 1/2 c. dry white wine (I use a cheap Sauvignon Blanc usually)
4 c. shredded Swiss cheese
1/2 t. baking soda
2 T. flour
dash garlic salt
1/8 t. Cayenne pepper
2 T. Kirsch or brandy

Rub inside of pot with garlic and toss. Heat wine in pot at simmer. It should bubble slightly but NOT boil. In a separate bowl toss the cheese with the baking soda and flour. Add cheese, 1/4 c. at a time, to hot wine, stirring in a figure 8 motion, until smooth and blended. Add pepper, garlic salt and brandy. Stir. Allow to heat (monitor temp for scalding) for 5 min. for flavor.

We dip in French bread cubes. Apple slices can be good too. It sounds a little putsy, but it's pretty easy. Enjoy! The non-alcoholic alternative uses milk instead of wine. I really like the distinctive flavor the wine gives it.

Here's what I do:

Grate half pound of Gruyere cheese, sometimes I mix with regular Swiss, this year I used Gruyere and Gouda. I'm lazy so I put it in the food processor. With about 3 tbls of corn starch. I put the grated cheese and corn starch in a plastic bag, shake it up, let it sit to room temp.

Simmer about 2 cups white wine in a sauce pot.

Grate half a clove of garlic, pinch of salt and pepper.

Slowly add cheese/corn starch mixture, a little at a time, until you like the consistency. If you add TOO much cheese, you can add a little more wine, but heat it up first in the microwave.

Most recipes call for a cherry liquor as well, but I leave that out. The kids hate it that way!

Here is a recipe that came with my fondue pot...

for medium thickness sauce:

2 tablespoons butter or margerine
2 tablespoons flour
1 cup milk
1/4 teaspoon salt
1/8 teaspoon pepper
1 cup cheese (of choice, I like a mixed shredded blend)

Place butter in fondue pot, allow to melt. add flour and stir until smooth, cook 1 minute stirring constantly. gradually add milk. cook, stirring constantly until thick and bubbly. add salt and pepper. add cheese and stir until melted.

(If you want thicker sauce 3 tbsp of butter, 3 tbsp flour rest is same. for thinner sauce, chage above ingrediants to 1 tbsp).

I have a book called The Fondue Bible. It is excellent for recipes. We have done the standard cheese fondue recipe, but also have enjoyed a pizza fondue and a mexican fondue. They are cheaper, and very yummy (the swiss cheeses are very expensive). We really liked the pizza fondue the most, I think. It has mozzarella cheese in it, very mild. But also some diced tomatoes. Let me know if you want the recipe. I'm happy to share it. Rushing out the door right now, or I would just include it now for you.
I also want to recommend using either chicken or beef broth instead of oil. We did that this year, and it was so good. Clean up was way easier also. And, it is healthier for you. Let me know if you are doing chicken or beef, and I can share the recipes for that if you are interested. Have fun, whichever you decide to do!

My parents do fondue all the time. My kids normally make it :).

The cheese is just a premade pack they get from Giant though. So if your local grocery store carries stuff, that might be an option.

And what fun! I might do this for our NYE now! We were invited to a party...but with 3 kids and driving past midnight - I think we'd rather stay home.

I rub a pot with the cut surface of a clove of garlic. Bring 1 to 1-1/2 cups of white wine to a boil. Gradually add 1/2 lb of gruyere with 1/2 lb of Jarlsburg that you have cubed and tossed with 1tsp of cornstarch. Mix well after each addition. When completely melted add 1 Tbs Kirschwasser and serve with cubed French bread. Yum.
