I just tried a new one I found on Foodnetwork.com and it's great! It's from Paula Dean and has a 12 oz jar of PB, oatmeal, choc chips and M&Ms.

Monster Cookies

1 C. butter
2 C. sugar
2 C. brown sugar
6 eggs
3 C. peanut butter
2 tsp. vanilla
1 tsp. salt
4 tsp. baking soda
9 C. quick oatmeal
1 C. M & M's
1 C. chocolate chips

Heat oven to 350º. In large mixing bowl, cream together butter and sugars. Add eggs, peanut butter and vanilla. Stir in salt, soda and oatmeal. Add M & M's and chocolate chips. Bake for 8 to 10 minutes, depending on size. Do not over bake. These can be made "monster size."

My son likes to make them the large size, but they are so filling. I drop one Tablespoon of the batter for each cookie to get the regular size. Enjoy!

Ingredients:
3 eggs
1 1/4 c brown sugar
1 c sugar
1 t vanilla
1 t Karo syrup
2 t baking soda
1/2 c butter, (1 stick) softened
1 1/3 c peanut butter (crunchy or creamy)
4 1/2 c oatmeal
1 c chocolate chips
1/2 c M&Ms
1 c coconut
(really, I throw in anything extra that I have handy or a little bit left - raisins, goldens raisins, craisins, sunflower seeds, peanuts)

Preheat oven to 350.

Combine eggs and sugars and mix well. Add vanilla, Karo syrup, baking soda, and butter mix. finally add peanut butter, oatmeal, chocolate chips, M&Ms, coconut, and whatever else you have decided to add.

Drop 1 TBSP scoops of dough on cookie sheet. Bake for 15 minutes, being careful not to over bake. Cool and enjoy.

I have also found that if you can drop 1TBSP onto cookie sheets and freeze for easy cookies later! It works out great! :)

I call them 1:1:1 cookies. One cup of Peanut butter, one cup of sugar and one egg. You can make them as big as you want them and as thick as you want them as they don't spread much.
