On the Hunt for the Best Peanut Butter Cookies Ever...

I've had a craving three times now for peanut butter cookies (I'm 23 weeks pregnant- giving into it is non-negotiable!!). I've tried store-bought, I've tried bakery, I've tried making them myself. Nothing is cutting it. I want rich peanut butter flavor, chewy, not crumbly, and not overly sweet. I made a recipe last night that didn't satisfy. So I'm on the hunt again.

How do I get the BEST peanut butter cookies EVER???

I can totally relate. I'm 35 weeks pregnant and had to have peanut butter cookies a few weeks ago. Here is the recipe that I used. I LOVE these! I froze most of them so that I can pull them out of the freezer whenever I have the craving.

There's a really peanutty, yummy recipe I've made from America's Test Kitchen that sounds like it will fit the bill. Here's the recipe:

2 1/2 cups unbleached all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon table salt (if using unsalted butter, increase to 1 teaspoon)
16 tablespoons (2 sticks) salted butter, softened
1 cup packed dark brown sugar
1 cup granulated sugar
1 cup extra-crunchy peanut butter, room temperature
2 large eggs
2 teaspoons vanilla extract
1 cup roasted salted peanuts, ground to resemble bread crumbs

1. Adjust oven racks to upper middle and lower middle position and preheat oven to 350 degrees. Line 2 baking sheets with parchment paper.

2. Whisk the flour, baking soda, baking powder, and salt together in a medium bowl and set aside.

3. In another bowl, beat together butter and sgars at medium speed until light and fluffy, scraping down the bowl and beaters as needed. Add the peanut butter and mix until fully incorporated. Add eggs, one at a time, and the vanilla and mix until combined. Decrease speed to low and add the dry ingredients; mix until combined. Mix int the ground peanuts until just incorporated.
**You may need to mix some of this by hand, especially when you get to the dry ingredients, because the dough will become very stiff.

4. Divide the dough into 36 portions, each a generous 2 tablespoons, and roll them between your hands into balls about 2 inches in diameter. Place the dough balls on the prepared baking sheets, spacing them about 2 1/2 inches apart. Press each dough ball twice, at perpendicular angles, with a dinner fork dipped in cold water to make a criss-cross design.

5. Bake, switching and rotating the sheets halfway throught the baking time, until the cookies are puffy and slightly brown around the edges but not on top, 10 to 12 minutes; the cookies will not look fully baked. Cool the cookies on the baking sheets for 5 minutes, then transfer to a wire cooling rack and cool to room temperature.

Enjoy!

The recipe Luckymama posted is a great one. However, instead of using 2 cups of white sugar I use one cup of brown sugar. It can either be light or dark depending on your preference. It keeps them sweet without being overly sweet in my opinion. I actually bake huge cookies using 1/4 C measuring cup to mold them. I bake mine at 350 for around 12-16 minutes. I pull them out while still not completely cooked as they'll still cook while resting on the pan after you take them out. I also love to add peanut butter chips to these cookies. I'm a peanut butter a-holic, what can I say?

I'd be diving into a jar of crunchy peanut butter!!! lol!!

Have you tried any "gourmet" shops instead of just the regular bakery? They are sometimes better!!

We have a store in our mall that makes really good cookies - "Cheryl and Company" - not sure if you have those down there. They also give out free cookies for A's on a report card - my kids love them!!

Good luck!!!

1 cup peanut butter (see note)
3/4 cup natural cane sugar
1/4 cup brown sugar
1 egg
1 teaspoon baking soda
1/2 teaspoon vanilla
additional sugar for rolling

Preheat oven to 375 degrees°F. Bake 10 minutes.

If you get a peanut butter without added sugar these aren't too sweet.

Do you have Blue Chip cookies there? For some reason I feel like they started in Texas?? Anyway, their cookies rock my world and they do have a tasty, chewy peanut butter one. They even have a PB one with chocolate frosting on it...yummy. Other than that, I guess I'm outta ideas! Good luck, I hate that unrequited craving feeling!

I don't know about the "best" cookie, but if you want a cookie to be soft, skip the butter and use shortening or margarine instead. The flavor of butter can't be beat (in my opinion) but it does make the cookie crunchy.

Do you have a Mrs. Fields? They are usually in the malls and are really good.

I'm not a good cook and don't bake because there is way too many ingredients and it seems like too much work.

However, I'm going to try luckymama's 3 ingredient cookies...that's right up my alley and I already have that in the house! Hope you find something that works for your craving! =)

no matter what the recipe....always cream your butter (use real butter). but cream your butter and add the eggs and sugar....and if you use creamy instead crunchy you should be guaranteed soft chewy cookies!!!
