Must be a pasta night!

I'm making a linguini with pesto (Kiddo is a great pesto helper, esp. with removing basil leaves and operating the cuisinart.) We'll fold in black olives, artichoke hearts and veggie "pretend" chick'n strips. Yum! I love one-dish meals.

We are cleaning out the fridge which has apple crisp, home made marinara, hot Italian sausages, pasta and I made one of our favorite fresh salads to go with it...

Light, Fresh ad Yummy...

Grape Tomato, Cucumber, red onion and feta cheese in vinegarette (sp.. that looks weird). Oh well.

Funny you should ask.
I just told Husband "Um, I think we ought to go over to the Willow Steakhouse for some grilled salmon with lemon dill sauce.." Man, I LOVE that stuff.
So, I know that I WILL be having Salmon, rice pilaf, and steamed veggies for dinner and NO DISHES!!
If I was young and raising kids, the usual could have been Pork chops, mac and cheese and green beans with a side of cottage cheese and peaches.
I love the empty nest... it's so nice to be able to go out whenever you want to.

Well, I am cooking whatever is in the house so we are having chicken alfredo with asparagus. What pasta is a mystery because I am not sure if I have enough linguini for all. Might be spaghetti pasta with the sauce. Not a stickler.

I thought I made a great meal--

Shell pasta with spaghetti and pesto sauce, with baked chicken tenderloin with the same sauce. 2 kids loved it, and I told my oldest the others thought it was delicious. He looks down at his bowl and says, "No, it's ba-badish!" LOL. Can't please them all.

Sunday night is leftover night.

Monday night is usually pasta. We are having American Chop Suey. It is something my Mother In Law used to make...it should be something like "simple spaghetti"

Elbow Macaroni (cooked)
Cooked hamburger
chopped onion
sliced black olives
tomato paste
tomato sauce
diced tomatoes

mix together, serve with garlic bread or corn bread...it's really easy to make and VERY filling...I do NOT know how it got the name "American Chop Suey" but that's what he's called it...oh well...

hamburgers luckily we had buns in the freezer, a little side custrard cup of peas, and nothing else because i always for get side dishes so i never thought to put the fries in to bake until the burgers were almost done. I offered the kids to get applesauce or cottage cheese out for them but they declined, so ,,, so be it.
\ and of course hubs say s he will be home a half hour after we have eaten but most of them time if i wait for him it ends up being an hour and then he says oh he really isn't hungry anyways. soo again so be it.

Spice-rubbed beer-can chicken roasted in the oven, brown rice pilaf and broccoli. Nice and simple tonight as we had hockey and lacrosse and needed stuff that more or less cooks itself. Will use the chicken later in the week for fajitas or Thai lettuce wraps.

I made this recipe up yesterday after our neighbor brought us several daikon. It was very good. We ate it with rice, a salad, and some strawberries for a light dinner. My 5 year old son, who has always hated daikon, loved this. We will eat the left overs tonight for dinner. It looks like I can get about three meals for the three of us out of this easy to make recipe. I might use a bit more chicken next time, but I used what I had in the fridge.

Daikon Chicken Soup

1 onion, chopped
1 large carrot, rolling wedges
1 daikon radish, 1/2inch quarter rounds (about 4 cups)
100grams shimeji mushroom (or shiitake mushroom)
200grams chicken thighs, chopped in small pieces
2 cups dashi broth (you could use chicken broth)
3 TBSP light soy sauce
1.5 TBSP sugar
2 TBSP grated ginger
1 tsp garlic powder
1 TBSP Canola oil

In a large sauce pan, sauté onion and carrot for 3 minutes. Add soy sauce, sugar, ginger, and garlic powder. Sauté for 2 more minutes. Add mushroom and daikon. Add dashi broth. Add chicken. Bring to a boil. Then lower heat. Simmer covered for about 30 minutes, or until daikon and carrot are cooked through.
