I'm making vegetable beef soup for dinner and trying to decide if I should put potatoes in it or not I have a few that need used up. I've put celery onion corn green beans and carrots in it. Also canned tomatoes for the liquid. Thank you

I'm letting it cook really low and slow all day so everything can meld together and the meat get nice and super tender.

I never can pass up a potato in any form...french fried,baked,twice baked,mashed, in soup etc.

So here is a vote for throwing in some diced potatoes.

Sure, why not? I figure if I have something that needs to be used up, it goes into soup (obviously within reason, lol!)
I made a very similar soup last week- beef broth, green beans, carrots, onion, potatoes, a few sweet potatoes and a bit of leftover marinara sauce plus some chopped up elf steak since that is the meat we had that needed to be used. It was fabulous and healthy.

If you add potatoes, you might consider adding more stock, as they can absorb enough water to turn your soup into a stew. So, do consider the amount of potato, and you may need to tweak the salt before serving as well. (They tend to absorb salt flavor, which is why adding a potato to correct a too-salty dish is often suggested.)

Sounds delicious. Also, you might consider adding them in just an hour or two beforehand as otherwise they *will* mush out.

Well, I would say if you have some ready to be used, I would use them!

I like potatoes in soup, especially with beef! Sounds good!

We like potatoes in our veggie soup. I just dice them up and put them in.

I always put small cubed potatoes in my veg beef soup. I always throw in lima beans, also.
Just made this last night except used venison.

I like potatoes in it. But I would microwave them for a minute before you add them, because they can take longer to cook than everything else.

Yes on the taters. My wife always puts some chicken bouillon cubes in as well, regardless of the meat selection, it just adds some flavor.

Yep, that's the beauty of soup, you can put almost anything in it! It's a great way to use up the odds and ends in your vege crisper.
Just remember that diced potatoes take about 10 minutes to cook, so you may want to gently boil them separately before adding them to the soup (you don't want to overcook the veges into a soft mush.)

My personal cooking rule: If it tastes good you did it right. Go for it with the potatoes. I would recommend, however, dicing them to approx the same size as the meat and other veggies.
