Does anyone have any great "single pot" recipes. I cook ...a lot. Unfortunately this leads to a seriously messy kitchen. I define single pot recipe as any recipe that requires only one vessel to cook in (chilli, soup, casserole). I would like some that are complete meals (multiple food groups) that I can serve for dinner. If you guys know any, let me know!

Beef stew is one of my favorite crockpot recipes. I bet you can find one online. I've also made pot roast & pork roasts this way.

CHICKEN, RICE, BROCCOLI & CHEESE
CASSEROLE

1/2 small block of velveeta cheese
1 c. Quick Rice
1/2 stick butter
10 oz. frozen chopped broccoli
1/2 c. milk
Chicken, cooked
1 can cream of chicken soup
1/4 chicken broth
1/2 onion

Combine all ingredients. Place in casserole dish. Bake at 350 degrees for 30 to 40 minutes.\

I buy a rotisserie chicken and tear it up to put in the casserole so i dont have to clean and cook the chicken!

also you can make a roast in the crock pot with carrots and potatoes

TATER TOT CASSEROLE

In an oven-safe bowl or casserole dish, layer the following ingredients:

1/2 bag of frozen tater tots
1 lb of boiled chicken breast, cut into small pieces
1 can of cream of mushroom soup
1/2 bag of frozen tater tots
1 bag of shredded cheddar cheese(or any blend of yellow/white cheeses)

Bake at 375 for an hour, or until cheese is bubbly and tater tots are thoroughly heated.

CROCK POT CREAMY ITALIAN MIXTURE

4 frozen chicken breast
1 pkg dry italian dressing mix
Water according to the dressing mix instruction
8oz cream cheese
1 regular size can cream of mushroom soup
Pasta

Mix the Italian Dressing with the water.
Put the chicken in a crockpot and pour the Italian mix over it.
Cook for 3 hours on low.
In a bowl, mix soup and cream cheese together (we use a hand blender for this).
At this point you can cut the chicken into bite size pieces (or not) then put back in the crock pot. Put the cream cheese mixture in and mix well.
Cook for 1 additional hour
(it looks nasty lol but is wonderful!)
When it has about 10 min left cook whatever pasta you want to eat with this.
Stir the chicken again. The sauce will be slightly lumpy but shouldn't be too much. You can add spices to flavor it up more as well but I think its fantastic the way it is!
When all is done, pour the chicken mix over the pasta

EASY CHICKEN TORTILLA SOUP

1 can of chicken broth
1 can of V8 juice
1 pkg taco seasoning
1/2 onion chopped
1 lb of chopped chicken (I used a chicken from Albertson's Deli)
1 pkg frozen corn
1 can black beans (drained)
1/4 cup cilantro chopped
1 can of green chili(chopped) optional
Tortilla chips
Avocado
Sour Cream

Combine Chicken broth and V8 juice chopped onions, green chilis, taco seasoning in a sauce pan and let it simmer until onions are translucent. Add chicken, corn, black beans bring to a simmer for about 10 minutes, add avocado, cilantro, sour cream, and tortilla chips before serving.

My daughter loves for me to make tuna mac & cheese!

All you do is make whatever mac & cheese you like according to box directions (We like Velveeta Shells & Cheese)

Then once that is done, add in a can of tuna, and a canned veggie (we use peas). You can add anything else you'd like of course.

All in one pan! :)

I usually let it sit on the stove on low & stir occasionally to let everything heat up together a bit before serving.

Winter Roast-

Pork Shoulder or Eye of Round Beef or some other equally moderately fatty cut of beef or pork bone on or not
2 chopped sweet potatoes
2 chopped red potatoes-skin on
2 chopped turnips
1 pkg. dried apricots
3 cans of Hunts stewed tomatoes (I like Hunts cause they don't use corn syrup)
1/2 cup veg or chicken stock
Liberal dashes of Cinnamon, Cayenne pepper, and Cumin
Simmer in crock pot on high all day, about an hour before serving, remove meat and cut up into chunks.
Serve with Rustic bread or rolls
This is super earthy and hearty, makes great leftovers, and the longer it cooks, the better. My whole family loves it, even my 2 yr old! Plus it's loaded with nutrients!

I made this one a couple of times and was pleasantly surprised by how easy it was to make. It only uses one pan and cooks in twenty minutes. . This comes out tasting like Mexican style chicken w/Spanish rice and the chicken is so moist. I bet you could even add a can of drained whole beans such as black beans or pinto beans during the last few minutes of the cooking time just to heat them through. And/or maybe even frozen corn kernels. It would also be good wrapped in a flour tortilla for a chicken & rice burrito. Or in a bowl with some tortilla chips crumbled on top for a Mexican chicken & rice bowl. You could serve it with sour cream, avocado, etc. if wanted. It is so versatile. (It is also low in Weight Watcher points as I ran it through my Points Calculator before...I think it was somewhere along 6-8 points w/out all the additions and easy on the cheese.)

Warning: If you're cooking for children or don't like spicy food use the MILD rotel tomatoes

i dont' have any actual recipes , but I like to combine things like sausage and rice and just cook it together.
I make something we call "taco rice"
two of those lipton rice sides the "taco rice"
a can of red kidney beans drained and about a half lb or lb of browned ground beef depending on how meaty you want it. I usually have about a lb already browned in my freezer I just put it all in the same pot and cook it using the directions on the rice package adding a bit more water so the rice boils.
it's yummy put some sour cream and cheese on the top it's always a hit and its easy to make,

One of my husband's favorites is when I do a beef roast in the slow cooker. Put the roast in with some beef stock, baby carrots, onion flakes, salt and pepper, and a little wine. You can make this a single-potter by putting in some potatoes.

Fideo
In the pasta section, purchase 2 boxes of Vermicelli (fideo) ~this will feed 4
1 lb ground beef (or ground turkey)
1 small onion chopped
1 can - 14 ½ oz Whole can tomatoes squashed with juice
½ tsp ground cumin
1 clove of garlic
3 beef bullion cubes (option 3 cups beef broth)
Black ground pepper
1 zucchini shredded

In a large skillet (will need a lid) or 3 qt stock pot (will need lid)

Brown ground beef with onion, garlic, cumin, zucchini, and black pepper
Drain all fat and place meat mixture aside.

In skillet/pot, heat 2 TBLSP olive oil, add both boxes of vermicelli and brown in the oil.. Stir it constantly until it is browned. Do not let it burn.
Add Beef mixture
Add 3 cups Beef broth (or 3 cubes and 3 cups water)
Pour in crushed tomatoes with juice.

If mixture is not slightly covered with liquid, add water till it is.
When mixture begins to boil, cover and lower heat to low/medium.
Do not lift the lid.
Simmer 18 minutes. Serve in bowls..

With the weather getting cooler, soups are great. Here's my favorite:

"GERMAN SOUP"
2 packages of Eckerich Smoked Sausage (sliced in 4ths, then diced bite-size)
1 whole onion – diced
4-6 cloves of garlic – minced
46 fl. oz. tomato juice (I get the huge can of store brand vegetable juice, in the juice aisle)
2 cans chicken broth
2 cans water
5-8 red potatoes – diced bite size
10-14 big leaves of cabbage – diced in small squares (When I go to the store, I just peel off the 14 leaves I need. You don’t have to buy the whole head if it’s sold by the pound. I get the real green leaves, which I think have more nutrients.)
3-4 carrots – diced small
dill weed (optional)

Sautee onion, garlic, and sausage for 10 minutes. Add cabbage, stir. Add carrot, stir. Add potato, stir. Add juice, broth, and water. Bring to a low boil, then turn heat down to med/low, cover your pot, and set timer for 20 minutes. Check veggies to see if they’re done. If not all are done, cook another 10 minutes and then taste again. Add salt, pepper, and sprinkle in some fresh or dry dill weed to taste.

Another dish I prepare every week takes TWO pots, but one is just for the rice. So if you prepare that ahead of time, then really it is kind of a one-pot-meal:

"SAUSAGE RICE AND BEANS"
Sautee 1 jalepeno, 1/2 onion, and 1 package of Eckerich skinless sausage in some juicy water from 2 cans of black beans. Sautee until onion is done. Add the two cans of beans. Put on top of the rice. Add tabasco to individual bowls for bonus spice (we like it hot!).

This is one of my favorite recipes. It serves 4 so I make it double or triple. Just use a flatter dish to bake it in when you make more of it. I love it on cool days and often will double the bread, butter, and cheese mix. It can get really toasted on top so watch it carefully.

I use cheap HB meat almost all the time and I cook a bunch up (the 5lb c*** from Wal-Mart) and freeze it in pint or quart size freezer bags to save time. I can make Tacos, HB helper, etc...very quickly when the meat is already cooked. Also, only one pan and one mixing bowl that the cheese, butter, and bread is tossed in.

I usually don't use the tomatoes on the top, although it is yummy too, I like the toasty top. I also just dump a drained can of peas in, I don't cook them at all.

Another one I use a lot is "Stone Soup" and yes I use a stone.

While I was taking child care classes the teacher had us bring cans of veggies, we signed up so we would bring different ones. The next week she read a book called Stone soup, it was a different edition that the old traditional one with one soldier or a group of English soldiers, it was very nice too. It had a soldier, or traveler, and they knocked on a old womans door asking for food. He was refused due to huger and poorness of the household. The smart man decided to make stone soup and began heating water in a pot with some large stones in the water, he started making comments about it smelling good and was going to taste so good. The old lady in the house eventually went to the dog house and got a meaty bone, added some veggies of her own and they dined very well together on his stone soup. Make in a very large crock pot.

Use some cooked meat, ground beef, stew meat, etc...add a variety of veggies directly from the can. I use 1-2 small cans of small cut canned Veg-All. The larger cans have huge chunks and don't taste as well to me. I add a can or two of canned corn, green beans, etc...the odd thing I add is a can of small cut sweet potatoes, they make the soup to me. I also add one can or Original Ro-Tel Tomatoes. The kids love adding the ingredients and since everything is already cooked they can do it and it's heated in just a bit.
