I am looking for a good easy quiche recipe. I am looking for cheese and broccoli or cheese cauliflower, with or without a crust. No meat please. Thank you very much in advanced.

super easy quice cupcake recipe:

5 eggs
3 egg whites
add pepper salt or any seasoning you desire

add egg mixture in to sprayed cupcake liner or non-stick cucake

in each cupcake holder you can add whatever you would like, cooked sausage to some, veggies to others and cheese to the ones for the kiddies. This receipe is awesome and provide more of a variety.

-Cook in pre-heated 325 oven for 12-15 minutes

If you buy Bisquick, there is usually a recipe on the side of the box for quiche. Check to make sure. I make the broccoli and cheese quiche and then add ham too. It is very easy! Hope this helps!

I just made this for Easter brunch and it was wonderful. Just make sure your spinach and pimentos are very dry or it will be watery.

Spinach, Red Pepper, and Feta Quiche
Recipe courtesy Sara Moulton

1 frozen prepared pie shell
3 tablespoons extra-virgin olive oil
1 cup chopped onion
2 (4-ounce) jars chopped pimentos, excess liquid squeezed out
3 garlic cloves, minced
1 (10-ounce) package frozen leaf spinach, thawed, excess liquid squeezed out and chopped
3 large eggs
1/4 cup grated Parmesan
1 cup milk
2/3 cup (3 ounces) crumbled feta

Preheat oven to 350 degrees F.

Blind bake the crust: Line the pie shell with aluminum foil and weight it with pie weights or beans. Bake for 15 to 20 minutes until light golden brown.

Increase oven temperature to 375 degrees F.

In a large skillet, heat oil over moderate heat. Add onion and cook until softened. Turn up heat to moderately high. Add pimentos, garlic, and spinach and cook, stirring until just heated through. Drain off any excess liquid. Beat the eggs in a bowl and add the Parmesan and milk. Add the spinach mixture and feta, and pour into the pie shell. Bake on a sheet pan in the middle of the oven for 30 to 35 minutes or until just set.

Its very good! Just a tip though. I've got a great oven, but I always seem to have to cook this almost 20 minutes longer than what it says.

My husband and I are big quiche fans - we have this one at least once a month. You can omit the bacon if you don't want the meat & you can also use whichever vegetables you like (but we love the asparagus!). I just halve the recipe to make one quiche. Make sure you let it sit for about 5-10 minutes prior to cutting & serving. Hope you like it!

UPDATE: Wow, we tried that asparagus and bacon quiche last night and it was fabulous, everyone was asking for 2nds and 3rds!!! Thanks Elaine!!

This is for spinach and cheese, but it uses Stouffer froze spinach souffle so it doesn't taste overly 'spinachy' but a great way to get kids to eat spinach and oh so yummy, my 4.5 yr old loves it!

Easy Spinach Quiche

INGREDIENTS
4 egg
1.5 cups cream
1 cup swiss cheese
1 Package Stouffer spinach soufflé (defrosted)
1 baked pastry shell

DIRECTIONS
1. Pre-heat oven to 350
2. Bake Pastry shell
3. Add eggs, cream, salt, pepper, cheese and a little more than ½ the spinach soufflé
4. Mix ingredients and pour into pastry shell.
5. Bake uncovered at 350° F for 45 minutes or until a knife inserted in the middle comes out clean.

I have doubled it and it is great!!
