I took out a package of frozen spinache this morning - I want more of a side dish than a dip.
Any ideas?

Cook with milk and crushed garlic until hot and the garlic is soft. The milk makes it less bitter, so only add salt after cooking. Simple and yummy. Or you can make a quiche. I also have a great soup recipe with spinach and acini de pepe pasta in chicken broth. Message me if you want either recipe :)
I would just squeeze out the excess fluid, add a little cream cheese, parmesan cheese and italian seasoned bread crumbs until it is about the texture I was looking for, put in baking dish and heat for about 20 minutes at 350 until hot and bubbly. Quick creamed spinach

If you have feta cheese, I add crumbled feta to spinach, super tasty. If no feta, try parmesan and garlic salt. Just add and heat.
Depending on how much time you have, you could saute and add onions, mushrooms etc.
I am a day late so can't help you for this round, however for next time, puff pastry stuffed with the spinach (be sure to get all the H2O out), cream cheese, your favorite cheese, add capers or green onion or,corn or aspargus chopped or, well you get the idea, all of them are baked to order for your family's special taste!
