Need Quick Mommy Breakfast-On-The-Go Ideas

Ok I realize this may be the most harebrained post on here, but I really do need help coming up with ideas for breakfast in the mornings. Hubby and I both work, so making a hot meal in the mornings is not an option - its about all we can do to get ourselves and our daughter ready and out the door. I need something I can throw in my bag to eat at my desk when I get into work after dropping the little one off at day-care. I'm lactose intolerant so cereal/milk won't work (and I don't particularly love cereal anyhoo). I'd rather not spend the money to go through a fast food drive thru each morning (not to mention health issues there). I can only take so much yogurt and granola. What have you guys done to get breakfast on the go??

My favorite breakfast is a whole wheat english muffin with avocado and a tomato slice. I do sprinkle on a dash of sea salt and some pepper. Yummy! wrap it in a napkin and out the door!

I take hard boiled eggs with me a lot, fruit. I found that Jimmy Dean has a breakfast sandwich that is lower in fat that I can heat up at work and eat at my desk. Good luck. I struggle with it also.

how about lean pockets, sandwiches-on whole wheat bread, waffles-whole wheat, fruit...these are a few things that i eat work in the am at my desk...it helps if you store plates, forks etc at your desk.

Hi K.
When I was working I had the same issue some of the things i would bring to work were muffins I made the night before a hard boiled egg, Eggs in a bag which is where you crack some eggs in a ziplock bag add cheese, meat whatever you like in an omlete mix it toghter and throw it in the microwave for minute. bagel&cream cheese peanutbutter toast. PB & J! I know it sounds kid-like, but they have so many benefits. It doesn't need to be refridgerated, is filling with proteins & healthy fats, and can easily be eaten at your desk. I tend to make mine the night before and store it in the fridge, but you can make it that morning if you prefer.

Another thing I did when I worked was keep a box of instant oatmeal at my desk with some disposable bowls & spoons. 2 packets, water, and 1 min in the microwave and I was set. What I loved about that was the fact that I didn't have to deal with transporting dishes, silverware, or food between home and work. Don't know if that's an option for you, but it was for me & I liked it.

My mom still likes to keep english muffins and PB at her desk. She also has disposable plates and utensils she keeps in a drawer.

south beach has a recipe for mini-quiches that you bake in muffin cups and then you can freeze them and heat them up as you need them. let me know if you want it i can send it to you.

On weekends I make mini banana breads and take them to work, I also don't need the diet drinks but will grab a slim fast and they do make lactose free drinks. Also being a breakfast lover I have learned to be creative. Making things in advance really helps. So thinking of fast food breakfast items, i.e. egg mcmuffins, other sandwiches and fruit cups. If you work has a toaster waffles with jam spread or even applesauce. Another thing that I do is the health food stores have many different types of prepackaged health other than cereal bars. I have never been a breakfast OR cereal person, but I found that I LOVE chocolate chex. It's not like cereal to me at all. I put them in a baggie and am able to snack on them in the morning while at my desk without have dishes on my desk and it's easy to swallow fast when the phone rings... I'm checking back on this question cause I am trying to eat in the morning to start the day off right...

My husband sometimes makes sandwhiches out of whole grain waffles. Peanut butter and jelly or sometimes peanut butter and banana, YUM.

When you have time make a ton of pancakes (w/ or w/o fruit) and freeze them. You can just pop them in the microwave and they are yummy.

My daily breakfast in the car is a banana, Danactive, granola bar, and coffee. It's not gourmet, but it does the job.

If you're a coffee-drinker, get a good high protein, low sugar protein powder and mix it into your coffee. If you have a little more time, make a smoothie involving "real" foods.
