Need a Recipe for Chili Con Queso

Hi Mamas!

I am having my daughter's 2nd birthday party this weekend and I am looking for a recipe for some kind of queso with meat in it (per my hubby's request). I would assume I could just brown and season some meat (with onions and garlic maybe?) and put it in some velveeta, but does anyone have a specific recipe for something similar that I could follow? Should I add some salsa or rotelle or something to spice it up a little? How much of each ingredient should I use? Any ideas would be appreciated.

I use ground beef with taco seasoning (as directed on package) and also add rotel to the velveeta...always a hit

I have several recipes for Chili Con Queso but this is the one I use for the kids (not to spicey) or large crowds. For large groups, I double it. I like to make it in the crock pot with a crock pot liner so that clean up is very easy.

2# Velveeta cubed
1 Can MILD rotel with juice
1# sausage, cook until dark brown, drain

That is it. You can use hotter Rotel and add lots of other spices if you want it really spicey.

A very common, easy recipe is 1 lb of velveeta, 1 can rotel (or 1 cup salsa - I prefer rotel), melted together, then add either 1 lb of browned sausage or 1 lb taco meat (I would brown the meat with onion, garlic, add a tbsp cumin, tbsp chili powder, or just use taco seasoning). That should fit the bill. Pretty easy. That makes it a good spicy, but if you prefer it much tamer (like very little spice) you could use the whole 2 lb. box of velveeta, but I find that too mild and thick. Oh, and don't drain the rotel. You need the juices in there.

I have a very different but easy recipe that's good. Use 2 boxes of cream cheese (8 oz each) melted with 2 cans of rotel. Add 1 package of breakfast sausage. Really good, and a little different than what most people serve!

You should brown your ground meat with salt, pepper and garlic powder. Then you will want to add some ground cumin. All of seasonings are to taste. I like to use my crock pot for my cheese, use one block of velveeta and two cans of original rotel and one cup of whole milk. I have a friend who uses sour cream instead of milk and that's good too. Set it on high and stir every couple of minutes. Once it all melts you can put it on low and add you meat. I don't recommend using more than one pound of meat for one block of cheese because then it's just too thick. My cousin browns breakfast sausage (Owens) instead of making the ground beef, another friend just uses the powder taco season packet and that's good also. If the dip is too thick add some more milk or water. Good luck!
