What Sort of Cheese Sauce to Bring to a Work Luncheon Fiesta, Crockpot to Heat

The ladies in my office want to have a luncheon with a mexican theme, There was a sign up sheet and mostly all that was left for me was Queso dip. Others are bringing crockpots of meat, soft and hard shells, rice dish, refried beans, and of course veggies and chips.
I don't know what brand of queso dip would be good, I eat nachos with cheese at a sporting event but don't make my own. Does it taste good cold from a jar?? Some one recommeded melting velveeta and rotelle ?? I don't know if i should make ti spicy or not seems like there will be enough other spicey stuff. If i just melted plain velveeta in a small crock doyou think that would work and does anyone have any advice on how long it would take to melt and how much velveeta i would need for 35 people?

Sorry this is kindof a dumb question but if you have any advice i would really appreciate it.

the REALLY simple recipe for the velveeta queso is on the velveeta box. 16 oz velveeta, 10.5 oz can of rotel, melt it together, and viola! Queso! and it definitely will work in a crock pot. for 35 people, i would maybe say to double the recipe. if you use the "mild" rotel, it will have a little bit of bite to it without being too spicy.

Hi VM

I would melt it in the microwave first, then transfer to the warm crockpot for transport.

1 lg block of Velveta
1 reg jar of Herdez mild salsa (I use the mild for large groups rather then spicy) You may have a favorite salsa of your own.

Sometimes I also add a can of chili with NO beans. I like Hormel or Dennisons...Again, you may have a favorite of your own.

I like the round corn chips, the kind that scoops up lots of dip.

You can use Velveeta, but we uses American Cheese. You can purchase a block of it at the deli section of your grocery store or Kraft sells American cheese next to the Velveeta.

Add 1 can of Rotel style tomatoes with chilis per pound of cut up cheese..

FYI, Purchase the Reynolds crockpot liners (by the aluminum foil). It will save you from having to clean out that crockpot..

I make a dip we call Dog Food Dip. It doesn't look amazing, but it tastes AMAZING!
For 35 people I would make a big batch. It's SO simple!
Do equal parts velveeta and hamburger (1lb hamburger, 1 lb Velveeta)
1 big jar of chunky salsa or 2 cans of Rotel

Brown hamburger, drain and put in crock pot.
Cube Velveeta, put in crock pot
Add salsa or Rotel.
Put the Crock Pot on high until the cheese is melted, then turn it down to low.

I usually add cut up onions to the hamburger as it's browning. Sometimes I'll throw in green peppers too. I've also added jalenepos for an extra kick.

My sister makes this dip, but instead of the burger and salsa she does Hormel chili with no beans.

Rotel Dip! It's the best! You put a block of cubed velveeta (do NOT use the light kind) and a can of regular Rotel tomatoes and green chilies in the crockpot -melt it and keep it on warm. Bring some chips, but also warm some flour tortillas to dip in it. SO yummy! If you get the biggest block of Velveeta, use two cans of Rotel.

my SIL and cousin make a cheese dip with velveeta (half a block of big one) and a whole thing of cream cheese, and then they fry up some mild sausage and add that in. then they serve with chips. you also put salsa in it. YUM!

This recipe has been in my family over 40years, and its now seen inside the lids of Pace Picante sauce (guess we should have patented it? haha):

8oz cream cheese
1 jar Picante sauce
2 cups shredded cheddar
Bake at 375 for 15-20mins, stirring occasionally to get the cream cheese all melted and mixed.

You can choose mild, medium or hot Picante, depending on your crowd. You can choose different blends of shredded cheese (we do white cheddar sometimes). You can add black beans. Tons of possibilities.

I second the Velveeta with salsa or Rotel. Remember the cheese really cuts down the spiciness of the salsa, so it turns out not very spicy at all. Plain cheese would be very boring for a Mexican theme and would not be considered Queso dip. If you want no spice, you can use medium or even mild salsa instead of hot. But the hot or at least medium gives it just enough IMO. There should be a recipe on the box of Velveeta, it used to have it anyway, I haven't made this in years. Hmm, now I need to go get some Velveeta and salsa. Yummy! I would make a warm one in the crock pot as well, cold cheese sauce is not very good. Make sure you get enough Velveeta, check the box for serving sizes.

Melt velveeta and a jar of salsa together...that's it and it's yummy! you could also do like a 7 layer dip with beans, sour cream, guac, lettuce, tomatoes, salsa, and cheese. that's always a fav at parties!

If you want nacho cheese sauce like you would get at a ball game than buy the big can of it at Sam's Club. It is in a big green can with one of their inhouse brand names. I have tried the stuff that they sell elsewhere and it is NOT the same. The big can will go a long way and serve 35. I believe it is under $5 too!

We do Velvetta + Rotel all the time for watching football at home. I'd say go with 2 blocks of Velveeta and 2-4 cans of Rotel.

I just got done eating a my version of Queso and chips. I used Velveta with salsa and melt them together. That's all I do. It's so good. It's total junk food that I'm ashamed to admit that I eat, but sometimes I just can't help myself.
I would think a big brick of Velveta or close to 32 oz. of it and two jars of what ever salsa you choose should be fine. Put it all in the crock pot cold, and cut up in chunks before you leave for work and then when you get there just put the crock pot on low heat and go in and stir it every hour. It should be perfect by lunch time! Enjoy.

I've had Momof2grlz recipe too and it's also really really good!

Here is a cold dip that I LOVE.....Mix one package of cream cheese and a jar of salsa in the blender....Blend and enjoy! It is SOOOOOO yummy!

For a hot dip, I agree with the Rotel....It is yummy too! Also, the new Philadelphia cooking creme Santa Fe is a really yummy sauce that might make a good hot dip. You could add some diced tomatoes to it to make it a bit chunky. :)
