Need a Good Chili Recipe

I love chili during the winter, but the only way I know to make it is with the packaged chili seasoning packet. Does anyone have a GREAT recipe that they wouldn't mind sharing? Thanks!

I **love** the book "Chili Nation" by Jane and Michael Stern. You probably can get it from the library even. They have a chili recipe for every state in the nation and there is a great variety and they taste wonderful -- even ones that you wouldn't expect. FE, Chili with three heads (not cloves) of garlic, peanut chili, chili with raisins, and chili with coffee or beer, just to name a few.

We make what is called "Cincinnati Chili." Cook up a pound of ground hamburger meat (or turkey meat is my preference) in a skillet. Add a little chili powder while the meat is cooking. Then toss in some diced onion. Let that simmer a bit. Then transfer to a larger pot or a small stock pot. Add one large can of tomato juice and another half can of water. Add more chili powder. Toss in 2 cans of kidney beans and a can or 2 of chili beans. I also like to throw in some bell peppers but that's me. Add some (not a lot unless you like it hot hot hot) cayenne pepper and black pepper. It will seem really runny to you at the moment. If it doesnt, add more water. Cuz next, to make it Cincinnati Chili, you put in spaghetti noodles. About one box. They will soak up a lot of the excess water. Once it's all warm yummy, I like to let it sit for about 30 minutes to thicken up even more. I like to eat it with crackers.

I have been making chili for a long time. I never found a **favorite** recipe until recently. We love this one.

I also have a very good and quick Tex Mex chili recipe by Rachel Ray. Let me know if you'd like that recipe as well.

Don't forget toppings! Here is a list of possibilities: diced jalapeños, hot sauce, chopped scallions, chopped red onion, oyster crackers, shredded cheese, sour cream, chopped fresh tomatoes, tortilla chips, corn chips, corn kernels, lime wedges, cilantro, cubed avocado, parsley, chives, cornbread, small cooked noodles (shells, macaroni etc).

I just use the season packet or the spice along with tomato sauce, kidney beans, can of baked beans, pinto beans, diced tomato's. I made bread bowls and fill them up. Such an easy recipe for these cold winter days :)

We love this recipe. There are a lot of ingredients, but it's rather easy to make. I usually make it around 2 or 3 in the afternoon and let it simmer in the crock pot until dinner time. Our kids aren't huge fans of spicy chili, so we skip the hot peppers.

I was just going to give you the same link Michelle Q M gave for Chili by George on Allrecipes.com. The first time I made it my husband talked about it for DAYS. Now it's my go to chili recipe...so yummy! And read some of the reviews on there, you can learn sooo much.

I am also a huge fan of allrecipes.com. We've tried several of the top rated chili recipes and have enjoyed them all. I tend to read the most helpful reviews of the recipes that are of interest and take the best ingredients from a couple different ones to make my own version. You really can't go wrong with that website and you can even search using the ingredients you currently have on hand.

Now that my daughter is at Purdue our favorite chili is Boilermaker chili. You can find the recipe at allrecipes.com. It is spicy!

Hint: Add a few ounces of good dark chocolate (like callebaut or guitard) to any chili recipe. Adds a depth and richness that can't be beaten. Most people can't actually taste the chocolate (supertasters can). Also, substituting ground buffalo for ground beef also really kicks things into a different dimension.
