Mamas & Papas -

Any recipes you can share? I've got a dozen golden delicious in the fridge. I don't want to bake a pie or a cobbler. Hoping for a recipe which calls for a lot of apples, to use up the supply.

I like to make warm cinnamon apples -- I don't use a recipe but you can Google it and find 100.

They freeze well too.

Apple Cake

Ingredients
2 sticks butter
1 C. brown sugar
1 C. sugar
2 eggs
2 ½ C. AP flour
2 t. baking powder
1 t. baking soda
Pinch salt
2 t. cinnamon
1 ½ t. nutmeg, freshly grated
3 C. chopped tart apples (Granny Smith are great)
2-3 T. milk
1 C. toasted pecans, chopped (optional)
Instructions
Cream butter and sugars. Add eggs. Combine dry ingredients and stir into butter mixture. Add apples, nuts (if using) and milk. Mix until combined. Spread into greased 9x13” pan and bake at 350 for 50-60 minutes. Pour glaze (recipe follows) over hot cake, cool and serve.

Glaze for Apple Cake
¾ C sugar
1 stick butter
¼ C. buttermilk
1 T. corn syrup
¼ t. baking soda
1t. vanilla
Combine first five ingredients in saucepan and bring to a rolling boil, stirring occasionally. Remove from heat and add vanilla. Pour over hot cake.

I love this apple cake recipe! Made muffin/cupcakes for a playdate a couple weeks ago and it was a big hit. FYI it gets moister as it sits too--I love it better the 2nd day!

My Inlaws gave me a ton of green apples last summer I made 3 of these cakes then just cut and froze the rest of apples with the cinnamon/sugar mix and used it for topping on ice cream later months. I suppose you could also then use it for an apple pie later in the year when you feel like a pie :)

Here is my all time favorite apple cake. It's actually a coffee cake but so good you can eat it any time. It is the first cake to go at any of the cake walks or raffles we hold at school. Enjoy!

Caramel Apple Coffee Cake

3 eggs
2 cups sugar
1 ½ cups vegetable oil
2 tsp. vanilla
3 cups flour
1 tsp salt
1 tsp baking soda
3 cups chopped apples (I use the food processor)
1 cup coarsely chopped pecans

Topping:

½ cup butter
¼ cup milk
1 cup packed brown sugar
Pinch salt

In a large bowl, beat eggs until foamy; gradually add sugar. Blend in oil and vanilla. Combine flour, salt and baking soda; add to egg mixture. Stir in apples and pecans. Pour into a greased 10 in. tube pan, (I use Bakers Joy to grease/flour the pan); bake at 350° for 1 to 1¼ hours or until toothpick comes out clean. Cool for 10 minutes before inverting onto a serving plate. (A Bundt pan works well too!)

In a small saucepan, combine topping ingredients. Bring to a boil; boil 3 minutes, stirring constantly. Slowly pour over warm cake (some topping will run down onto the serving plate.) Yield: 12-16 servings.

how do you feel about apple pancakes? one of our favorites. you slice up the apples like you would do for pie. roll them in brown sugar and sprinkle with cin. . melt about a 1/2 stick of butter in the bottom of a pie pan. pour the apple slices in. in separate bowl make up some pancake batter. pour it over the apples. bake in oven at 350 for about 35 - 40 minutes. pull out of oven when toothpick inserted is not wet w/batter. place serving plate over top and flip pancake out onto plate. serve with whipcream if so desired. we used to get them at a pancake house. had to learn to make them as they took to long at the place lol.

You influenced me to make apple muffins. I just threw together a quick recipe with each muffin coming in at a little under 198 calories. That's a fun way to use up quite a bit of apples. Granted, in my recipe of a standard 12 muffin pan I only used 2 however provided you're making a larger batch the possibilities are endless.
