I need a good recipe for an appetizer to take to my SIL Friday Night - I am tired of making the same old thing - Please let me know if you have one - Cheese Ball and crackers - This get together is for my in laws birthday. Thanks in advance.

I have a great one that looks really fancy (I impressed my inlaws!)
6 oz crab meat
4 oz cream cheese
chopped green onions (a handful)
1/4 cup mayo
wonton wrappers

mix everything but the onions and wrappers
spray some muffin pans with pam and put wontons in the cups.
bake at 350 for 15-20 mins
I add the green onions on as soon as they come out of the oven.

3 zucchini (about 1/2 pound each), sliced lenghwise into 1/4-inch slices
1 tbs olive oil
1/8 tsp salt
Pinch freshly gound black pepper
1 1/2 ounces reduced-fat soft goat's cheese
1 tbs freshly minced parsley leaves (I didn't use these)
1/2 tsp lemon juice
2 cups baby spinach leaves
1/3 cup basil leaves

Discard the outermost slices of zucchini and brush the rest of the slices with the oil on both sides. Season with the salt and pepper. Place on a preheated grill or grill pan (I used my toaster oven) for about 4 minutes on each side, or until tender.

In a small bowl combine the goat cheese, parsley leaves and lemon juice, mashing with a fork.

Put 1/2 tsp of the cheese mixture about 1/2-inch from the end of a zucchini slice. Top with a few spinach leaves and 1 small, or half of a large basil leaf. Roll up and plzce seam side down on a platter. Repeat with the rest of the zucchini slices.

It was huge hit at the party!!!!!!!!! I think next time I'm going to stick some procuttio (msp) in there also just to add a yummy flavor. Good Luck!

Hi A.! This one is has always been a hit where ever I've taken it.

STUFFED JALAPENOS (NOT HOT)

20-25 fresh jalapenos
1 pkg. cream cheese
1 pkg. (1 lb.) bacon

Rinse and dry jalapenos. Cut pepers in half and scoop out the seeds and the veins leaving then hollow. Next, spoon in cream cheese to fill pepper. Then wrap in bacon strips. I cut the bacon into 3 sections. (use a toothpick to hoold bacon if the strip is too short). Bake at 350 degrees uncovered for 1 hour.

Very quick and easy and delicious!! Good luck!

I am giving this one off the to of my head so if you are interested, let me know and I will detail it.

1 can of whole water chestnutts
bacon
soy sauce

soak the water chestnutts in soy for a bit, wrap each one with a piece of bacon (just large enough to wrap the nut) and secure with a toothpick.

Bake and serve. They are crunchy and tasty.

Layered Mexican Dip

In a glass pie pan (8x8 or 9x9 square can be substitited), spread the following ingredients in single layers:

1 can Refried Beans
1/2 lb. taco-seasoned (cooked) ground beef or turkey (with or w/o onion cooked in)
Salsa or hot sauce
1 tub Guacamole Dip
1 can black olives (drained VERY dry)
12 oz. pkg. Shredded cheese
1 tub sour cream
top with chopped green onions for color

Serve with tortilla chips.

This is just the suggested order to layer the ingredients, but you can always leave out something you do not care for. Just remember to alternate wet with dry ingredients.

Alternatives: tomatoes, lettuce, etc. (be creative)

Serve this with Club Crackers for best taste..

2 blocks Cream Cheese (low fat for a healthy version)
1 Cup Mayo (not Miracle Whip, Hellmans or regular Mayo)
1/3 cup chopped onion (or to taste)
1 tbsp garlic powder
1 can of precooked chicken (or if you have left over chicken from dinner one night, boneless/skinless chicken shredded)

Thaw cream cheese, so it's easier to work with, add all of the above ingredients with mixer.

Refrigerate, anywhere from overnight to as little as an hour.

Serve with Club Crackers...the longer the mixture sits, the stronger the onion and garlic taste will come out!

A., this recipe is always a hit and you can add whatever veggies you would like, depending on colors, textures, tastes. For Halloween, I've kept the colors black and orange (olives, cheese, grated carrots, etc.) For Christmas, of course, red and green. I copied this recipe from another site. Have fun!

Veggie Appetizer Pizza

2 cans (8 oz. each) refrigerated crescent dinner rolls

1 pkg. (8 oz.) Cream Cheese, softened

1/2 cup MIRACLE WHIP Dressing

1 tsp. dill weed

1/2 tsp. onion salt

1 cup broccoli florets
1 cup chopped green pepper
1 cup chopped seeded tomato (could use red pepper)
1/2 cup sliced pitted ripe olives (optional)
1/4 cup chopped onion

PREHEAT oven to 375°F. Separate dough into 4 rectangles. Press onto bottom and up side of 15x10x1-inch baking pan to form crust.

BAKE 11 to 13 minutes or until golden brown; cool.

MIX cream cheese, dressing, dill and onion salt until well blended. Spread over crust; top with remaining ingredients. Refrigerate. Cut into squares.

Top with fresh veggies.
