Anyone Have a White Queso Recipe?

I bought a block of Queso Blanco yesterday, (processed cheese, the kroger version of Velveeta). I am envisioning a yummy white cheese queso, but have no idea how to execute this.

I have bought those before too and often they would have a recipe on the back. When I've done it in the past, it was basically putting the cheese in a bowl, adding milk and microwaving it one minute at a time (stirring after each minute)until it was as thin as you prefer. It usually takes several minutes. Of course, start with just a few tablespoons of milk and if you need to add more you can. I LOVE white cheese dip, one of the things I miss about my ex-brother in law (who was Mexican) was a trip to his famly's restaurant in my hometown to get the best white cheese dip on the planet!

Recipe for Queso Blanco
In a sauce pan brown 1/4lb spicy sausage
after that is cooked Add 1 jar 8 oz Pace Picante Sauce (your preferred heat)
Turn heat down to Med/Low
Cut up your cheese into cubes (8oz) and add to sausage picante sauce mixture.

When cheese is melted serve. If you double the recipe - it fits well into a crockpot which also keeps it warm.

Add can of Rotel poured in a bowl with your cut up cheese and mocrowave. If you like spicy, get the hot Rotel.

I use Asadero cheese but should work the same with velveeta

1 c Asadero cheese; shredded
4 oz Jalapenos, chopped, drained, OR
4 oz Poblanos, de-veined & julienne
1/4 c Half & half
2 T Onion; finely chopped
2 t Cumin, ground
1/2 t Salt

I like my veggie crunchy so just heat all ingredients over low heat, stirring constantly, until the cheese is melted. Serve warm with corn chips and/or warm corn tortillas. I love using the Poblano pepper and will often roast it first and then add to my sauce once melted.

This may not be what you're looking for, but you can microwave cream cheese with Rotel, just like you would Velveeta and Rotel. It's a white, creamy queso dip that everyone loves! And, you can "spice" it up by adding other ingredients, like breakfast sausage (browned).
