Hubs loves these when we go out. I'd like to make them for our superbowl party. It seems obvious, but I really have no idea how to make them. Just bake potatoes and slice them??? What kind of potatoes would be best. And then just keep them warm in the oven???

What can I do next?

I bake my potatoes, then scoop them out and mix in cheese, bacon bits and chives - then put that mixture back in the scooped out skins and bake until golden brown...then I put sour cream, sliced black olives and cheese on the top.

I typically don't keep them warm in the oven - I put them on a "hot plate" SOMETIMES - other times I just serve them and they are gone...just like deviled eggs!!!

Yup, I agree with Wild One. I bake about 40 baking potatoes, slice in half, scoop out most of the insides (leaving some potato) and then putting in shredded cheddar, bacon pieces (buy already cooked bacon and crumble it up), scallions and jalapenos. Then I serve with sour cream on top.

You can be creative and use a variety of cheeses, too! Get gourmet!

My mom makes them exactly the way Wild One does, and they are amazing!

Until you are able to try them out on the family, Costco has frozen loaded potato skins.

I would bake potatoes, then halve them. ( rub ski s with olive oil before baking!)
Remove enough flesh to make them so that they'll hold toppings.
Place halves on a cookie sheet, add toppings (cheese, bacon bits, chives)
Then bake til cheese is melted.
Serve on platter, with small plates & forks on the side.
