Sunday Dinner Ideas?

Hi Mama's! I HAVE NO IDEA what to cook tomorrow. Last week I made this great Baked Ziti from allrecipes.com. I know I want to do some type of potao casserole but I don't know what meat to cook with it. HELP!

What can I do next?

Hi Tam!
I know there are quite a few recipes out there that are potato casseroles that include ground beef. Personally,I think ham goes well with potato casserole. It can either be added to the casserole or on the side, whichever you prefer. I like it in the casserole, because then I can dice it up and use a cheaper variety of ham than if I served it on the side.

This one got high marks from allrecipes. I have tried it once and liked it. Read the reviews to see suggestions from others. I think a lot of people traded the bacon in the recipe for ham.

I have a really easy meal I make a lot.

Pork Tenderloin (buy unflavored package in the meat department and there are usually two tenderloins in a package)
1 jar of orange marmalade
1 clove of minced onion (I cheat and buy the pre-minced garlic and put in about a spoonful)
Salt
Pepper

Preheat oven to 350 degrees. Using a Dutch oven or a pot with a lid you can put in the oven, put the pork tenderloin in and pour the jar of orange marmalade and garlic over it. Salt and pepper. Put in oven for about 45 minutes or until meat is tender. This can take up to an hour depending upon your oven or the size of the tenderloin. The marmalade makes a nice glaze too.

I also quarter red potatoes and drizzle olive oil, salt and pepper over it. I also put in fresh rosemary in the mixture. Put the potatoes and rosemary mixture in a glass casserole dish and cook at the same temperature as the pork tenderloin. I just check periodically for tenderness of the potatoes and usually cook about the 10 minutes less than the pork tenderloin.

I also make a quick salad. Romaine lettuce, raspberry vinegarette, crumbled blue cheese, mandarin oranges, and slivered almonds tossed together,

That ham one sounds really good(from previous response), I think I will have to try it. Being from New England I have to recommend Shepards Pie. It is not my favorite but the rest of the family loves it. You can vary on the vegetables that you put into it but this is my mother n laws recipe.
1 1/2 pd. of ground beef
saute onions and garlic add ground beef cook until done
Put in a casserole bowl. Layer corn (1 can)on one side and green beans on the other. Cover vegetables with a can of cream of mushroom soup. Add a layer of mozzarella cheese ( I use alot) Add layer of mashed potatoes to the top. Cook in oven on 350 for approx. 35 min.

Breakfast for dinner is always a fun treat at my house. The kids think it's silly, but want to do it for that very reason. You don't have to have a lot of sugar, either. But, make pancakes with peanut butter, or different shapes, mix in bacon, sausage, ham, cheese, whatever, in scrambled eggs. Ask them what they want in their eggs and let them put it in the eggs and they can watch you cook it. If you are a mom that likes to give sweet treats, you can put anything in pancakes. Their fave fruit, a few chocolate chips, things like that, and you don't really need syrup. When I say "breakfast for dinner?" everyone yells "yeah!!!". Plus it's an easy way to get them involved and it's just an easy meal.
