Hey Moms

I would like to make spaghetti tonight, but need some help and suggestions. I will not be using ground beef like I normally do and with homemade sauce.

We are slightly snowbound and so I won't be running to the store for anything. Here are some items I have that can be used.
Noodles
Left over Rotisserie chicken
Louisiana sausage
Ragu spaghetti sauce
Diced tomatoes
Rotel
onions
bell pepper
Cheddar cheese
Velveeta

Above listed items are possible things to put in spaghetti. I'm just not sure what I should use or what would be good combined. It doesn't have to have meat....I'm just afraid that it will be too boring with just noodles and Ragu. Any suggestions for me???? I also have garlic bread to use and stuff to make a salad.

Thanks!

What can I do next?

Caramelize the onions in EVOO olive oil first.
Take it out of the pan, then brown/cook the sausage.
Then put the onions back into the pan, then add the Ragu Spaghetti Sauce.
That's it.
Season to taste.

You can always add in the Diced tomatoes if you want.

Caramelizing the onions first... really makes it taste better and adds a better taste, to the spaghetti sauce.

I say brown the onion, peppers, sausages and chicken(or not chicken) together, mix in the red sauce, cook the noodles, fold in the meat and pepper/onions with the cooked noodles, grease the bottom of a pyrex dish pour the noodles mix, sprinkle with cheddar and parmesan if you've got any. Bake for 30 minutes at 350-uncover last 10 minutes to crisp the top noodles and cheese. Spagghetti casserole!

This is the perfect scenerio for www.supercook.com !!! You type in the ingredients you have on hand in your fridge or pantry. The site will spit out all the recipes you can make with what you have. It's really a life saver in a time like this!

Good luck!!

I would save the lousiana sausage and make sausage & pepper & onions (ideally goes with potatoes). The spices in andouille & ragu are going to clash with each other. You might like the effect, you might gag. I would cut off an inch of the sausage and test it by cooking it with a tablespoon of the ragu

I usually prefer a cream sauce (or pesto) with chicken. Super easy to make a cream sauce of your own if you have cream (or milk boiled down by about 1/3 or 1/2), butter, flour, & pepper. ((To make alfredo, you just make a cream sauce with parmesan or peccorino)). Pasta, cream sauce, chicken, and top off with diced tomatoes.

Do you have any parmesean? Even without, you can make an awsome pomodora sauce with the onions bell pepper and EITHER rotel or tomatoes. Use plenty & make it chunky w/ chicken. Add plenty of butter or olive oil for extra flavor. Just saute it all together and mix in w/ pasta.

Cook the spaghetti in one pot. Take the chicken and cut it up. Then take the sausage and cook it with a little olive oil. Dice some green pepper/onions as well. Once the sausage is done, combine it with the chicken and diced green peppers/onions then pour the ragu sauce and let it simmer for about 20 minutes. Don't forget to add your italian seasonings, pepper, mrs dash, etc. Stir the item around until everything has blended with the sauce. Then combine the spaghetti and meat sauce in a long casserole dish. Put the cheddar cheese on top and bake in the oven until the cheese has melted all over. If you have garlic bread already, you are in business. I did this with ground turkey and sausage. It was really good.

I would just go with the Ragu!
If you wanted to you could saute the onions and peppers in olive oil and garlic and then add the diced tomatoes. You could put some oregano or rosemary in for flavor. Don't know about your kids but mine would NOT eat it like this unforunately.

I think the spaghetti would be great with the chicken, ragu sauce, and noodles with some garlic bread! Why not cook the chicken in the ragu for a couple of minutes while you boil up the noodles...then add everything together! I once made spaghetti with shrimp and garlic bread and it came out delicious! Dont be afraid to try something new with what you have at home...

If you have any tortillas, you could make quesadillas with the chicken and cheddar, peppers and onions.

I'd just do Ragu over the noodles with a salad on the side with the garlic bread. Simple. Easy. Everyone will eat it. And you have stuff left to make another meal tomorrow if need be.
You could put the chicken (in chunks) over the top of the salad and have salad with chicken on it as a meal, with a side of bread.

If you have any eggs, you could make an omelette with the onions pepper and cheese. Even put the tomatoes on top for huevos rancheros. Yum.

I would omit the spaghetti sauce and spaghetti idea all together. Go for a cajun night. Saute the onions and bell peppers in oil. (garlic and celery if you have any) Add flour once veggies are translucent to make a roux. Stir over medium heat until peanut butter color. Add the tomaotes and water (chicken broth if you have it) Add tomaotes, rotelle, chicken and sausage and rice. Make it thin like a soup - you've got gumbo with no okra. Make it super thick and you've got Jambalaya. If youdon't have rice, just make noodles with butter, salt, pepper and garlic and pour your chicken, sausage cajun dish over the noodles
