So.... Whats for Dinner?

Yeah, what's for dinner? Me? I'm tired and will be calling my husband to bring home a pizza on his way home from work. (Not in our 'health plan... but oh well, I'll make a side salad!)

What about you? MORE importantly, when do you start and plan your dinner? I know some who have their meals planned the night before, then do the crockpot thing in the morning or begin their making dinner around 4 or so. I tend to freak out around 5:00, sometimes it will be 7 and we haven't even thought of dinner yet... something I'm trying to fix.

anywho ... yeah, I need a margarita. Maybe that will be dinner? And tacos to go with it? Could be a plan.

I work at a meat company, and get great deals on meat. We are having some kick-a$$ ribeyes - grilled to perfection - medium rare..... brocolli... some sort of potatoes. Haven't decided what kind yet.

My husband is having shrimp and cabbage stir-fry. I will be having soup, because my stomach feels icky today. I plan out my meals weekly. We get a produce basket from a co-op every Saturday, and I plan my meals around that. I go shopping on Sunday for the entire week. The shopping includes everything needed, food for breakfast, snacks, lunch, dinner, cleaning supplies, paper supplies, etc. (Actually I still meal planned before we starting getting baskets.) I keep the calendar on the fridge and it shows what we'll be eating every week. I also have a list there, in case we start to run out of staples I can jot it down. I like knowing what we are going to eat every day. We can have dinner right when my husband gets off, and have family time the rest of the night. It's nice.

Not sure what we're having tonight. We had chicken in the crock pot last night--yum! I would love to go to Chili's--but the closest one is about 30 miles...not going to get there tonight!

I always force myself to plan ahead because we don't eat fast food. It is SO hard to make myself plan all the time though. When I slack I end up doing something quick like turkey wraps or pick up a deli rotisserie chicken. That is my standard fallback. I also love to keep frozen fish and shrimp and veggies stocked in the freezer because it is another quick meal for when I am lacking in the planning department. Fish thaws quickly and cooks in a few minutes. Veggies steam in the microwave. Done!! If your family eats crock pot meals (I wish mine did!!) then I have seen some women post on blogs about prepping tons of veggies and sliced meat with spices in gallon baggies at the beginning of the month so you have a host of crock pot ready options in the freezer.

I used to plan bi-weekly menus...now I normally plan as I'm going through the grocery store. Bad, I know.

Tonight is lima bean casserole. Sounds HORRIBLE - I know! I've had everyone say that must be the most disgusting thing in the world. My husband won't try it and my 6 year old isn't a fan. My 4 year old would eat the whole 9x13 himself, and my 8 year old is good with it too. I love it! I grew up on it :). And it really is good. If you like lima beans that is!

Today was the $5 Little Caesars pizza with breadsticks. My kids thank me for buying them pizzeria pizza...and it's going to be a great night because they're fed and happy. I would rather eat healthier meals which I normally cook daily, but lately my kids don't show much appreciation and it leaves me deflated:(

So, pizza, pizza!

I wing it with meals. Some I plan out weeks in advance, others I just happen to feel like cooking for a few hours so I find something that requires slaving that I haven't made in awhile, others I plan when I get hungry. Others are based off of sales by stores (food is EXPENSIVE up here). Others are lazy day, or "I'm done cooking today" meals. Still others are... well... There's really no rhyme or reason to the day to day. It really all just depends on my motivation. And how much I happen to have. Along with it's cousins; money & time available.

sounds like my house. I was going to make enchiladas last night and never got farther than cooking and seasoning the hamburger. suffice it to say, the kiddo's just had quesadillas last night. make the enchiladas for lunch today. my thing is i just get so busy/sidetracked running around after my 3 lil ones that dinner is the last thing on my mind. the twins are only 14 months old, so they will eat anything you give them and my almost 3 year old is pretty much the same. with my husband working nights it is hard to get motivated to make a big meal every night when the kids will be happy with the small simple stuff. on the weekends we have our big nice meals, with Sunday dinner being a pretty big deal, and even then we usually arent eating until 7 or so.

I try to use my crockpot as much as possible for the simple fact that you just throw it all in there and don't have to deal with it. I wish I were more diligent about my meal plans.

I do the grocery list and my husband does the grocery shopping on Sundays - don't be jealous! I look through the sales flyer while doing the list and make up our menu for the week then. I post said menu on the fridge so I don't have to field questions about what's for dinner every night of the week - it also helps me to remember. Fridays is usually left-overs or frozen pizza.

I try to plan a weekly menu just to make sure we have all the parts to actually make meals. I start cooking around 4 because my husband has a long commute and I like having dinner done and ready when he comes home.

Tonight, chicken breasts in rice-a-roni, baked in the oven.

I picked up 24 pepperoni rolls from the local pizza joint. I hope they'll last us all weekend (we live out in the country, rain in the forecast all weekend. Uggh). And today I got a pint of grape-tomatoes for 99 cents. I am snacking on those now actually. My son just ate a huge plate of watermelon, plus some carrots to go with his pepperoni rolls.

I used to plan my meals every Sunday. Now my husband is doing different work and I am helping him. Every day is chaos. Hence, the pepperoni rolls tonight. Tomorrow --- um .... whatever is in thefridge to clean out first. Then I may have to actually cook some healthy food soon after the fridge is cleaned out.

We had pork chops, mashed potatoes and broccoli. I plan out about 5-6 meals before I grocery shop. So usually meals are planned for much of the week. I also have some quick and easy dinner ingredients available at all times and sometimes we just have leftovers.
