I ruined what I was going to make: Thai chicken noodles. I still have the plain cooked chicken. Need some inspiration for a quick dinner for tonite.

Just use that same plain cooked chicken and then, shred it up and combine it with whatever lettuce you have and make a salad.
Then top with nuts, or mandarin oranges, or dried cranberries, or boiled eggs or whatever. And make a nice salad.
Then use an Asian salad dressing or whatever salad dressing you have on hand.
This is good.

Chicken and cheese quesadillas?
All you need is tortillas, cheese & a can of green chilis.

A salad?
Shred chicken, add your other favorite fixings like mandarin oranges, cucumbers, etc.

Chicken, mashed potatoes & gravy & a veggie...or chicken, rice & a veggie?

Cut up the chicken.

Make a marinade consisting of olive oil, an acid like lemon juice or orange juice or red wine vinegar, and some spices. Use cumin and chili powder if you want a Mexican flavor, use garlic and ginger if you want an Asian flavor, or basil and oregano for a Mediterranean flavor. Toss the chicken in the marinade to coat.

Sear the chicken quickly and briefly in a hot skillet with a little oil, or on a grill.

Serve over noodles or rice, or in rolls with lettuce and sliced tomatoes, or over a fresh salad.

Add corn, black beans, salsa and carrots for a cold salad.

Add some pasta sauce and cook some pasta with a salad.
Add some taco seasoning mixed with a little water, cut up & saute some onion/bell pepper and make fajitas with Spanish rice.
Something quick.

I took a beautiful artisan bread, brushed each slice on one side with olive oil, spread some pesto on the plain sides, then put fresh mozzarella cheese slices, fresh sliced tomato, slivered red onion, and a cooked chicken breast-then I grilled it-oh, I drizzled a little cream of balsamic over the tomatoes-delicious!

this looked good-I just use a bit of curry in the mixture when I make Chicken Divan and bread crumbs instead of chips:
