Puff Pastry Recipe?

I was cleaning out the freezer and found a box of puff pastry sheets. I thawed them in the fridge, and I feel like spending some time in the kitchen today cooking and baking. I've been searching for some recipes, but nothing quite catches my eye. Do you use it? What do you make with it?

I use it all the time.

Leftover chicken with a jar of salsa and pinch of shredded cheese, fold over to make a triangle, bake in the oven.

Use it for fried cheese, slice of any med-hard cheese, fold over, seal edges with fork, fry in a little oil in a skillet.

Ground beef, bbq sauce....

lay out flat sprinkle with brown sugar and cinnamon, roll up like a log, slice into pinwheels, bake in 350 oven...

I use them for all kinds of stuff, but I what I want RIGHT NOW with them is spinach, feta, and chopped mushrooms. Something I have used the pillsbury croissants for but will try for the puff pastry is basically making shrimp creole and rice, putting some rice and a little creole in the pastry and sealing it, then serving the sauce over it after it's out of the oven. I know it works fine with croissants and I'm wanting something that would remind me a little more of the stuffed beignets I used to have back home (but don't know how to make a beignet myself, lol). Shredded (cooked) meats and pretty much anything (cheeses, sauces) will go in one. You could make a spiced beef and onion meat pie type thing. I used puff pastry a couple weeks ago for an appetizer at a mops club meeting that was goat cheese, roasted almonds, roasted raspberry chipotle sauce, and cream cheese stirred together and then cooked in the puff pastry, topped with more raspberry chipotle sauce. (small squares of that) On the box of the pepperidge farms pastry there's a strawberry dessert that we really liked.
