Newly Vegetarian and Need Meal Ideas

hi,

Well I went Vegan 3 months ago but it was very difficult so now I am Vegetarian. I am running out of meal ideas and get tired of eating the same things. I have come to the conclusion that I do not like tofu...maybe I am preparing it wrong..but I have tried several times and I just don't like the texture. I Love soy cheese though! anyway, please send me some ideas if you have any.

Hi there!
I try out some Indian vegan recipes that are very healthy too. I try to get my protein from lentils and beans. Every now and then you can make lentil soup. Also I stew up as many vegetables as I can and season it so as to make a filling meal with pita and hummus. Chick peas and vegetables made in a very mild broth makes a quick fix.

I am not sure you have heard of Indian steamed dumplings, you can get the batter at any Indian store. The batter is rich in probiotics and provides great nourishment.

Veggie pizza, couscous, tabouleh, rice pilaf can be great variations too.

Let me know if you needed any other ideas, just tried to jot down what I can think of off the top of my head. Being a vegetarian myself I try to vary what I eat every once in a way.

I want to preface this with the fact that I'm not vegetarian, however, I am such a fan of this woman's food that my family eats a vegetarian meal at least 2 times a week. She has a fabulous blog and some really inspired ideas. Hope this helps get you out of your rut!

She used to be a vegetarian and has TONS of great recipes on her recipe index (plus her blog is GREAT to read). She also has links to other food blogs and many are vegetarian.
