Need Awesome Blueberry Recipes

Jams, jellies, cobblers, buckles, breads, pies, smoothies are just a few things I could make with all the blueberries I have from a recent trip to Michigan. I have my recipes ready to go but love to recipe swap with others. I also plan to freeze a bunch of them.

I am wondering if anyone have a tested, tried and true recipe they would be willing to share?

mmmmmm! I just pulled this one out of the oven:
Mix these dry ingredients together:
1 1/2 Cups uncooked Rolled Oats
1/2 Cup whole wheat flour
3/4 Cup brown sugar
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
In a separate bowl mix:
1 1/2 Cups lowfat milk
2 eggs
Combine all ingredients. Fold in One Cup Bluberries. Pour into a 9x9 pan and bake 350 for 30-40 min.
Enjoy! I cut up leftovers into serving sized pieces and thaw a piece for my sons breakfast. He loves it, and its good for you.. Well, as good as you get without loosing taste!!!

I used to make Purple Cows for the kids in my child care center. they were leary at first but after one sipped it then they all, one by one, tried them and they were wonderful.

I can't remember the recipe but it had a bit of vanilla ice cream, fresh blueberries, a touch of vanilla, and milk. so, I guess it was really a blueberry milkshake...

I add them to pancakes. Blueberry and banana pancakes are my son's favorite. I usually have a bag of frozen blueberries so I will defrost them, throw them in the blender and add them to the following recipe:
1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 1/4 cups milk
1 egg
3 tablespoons butter, melted
Directions

In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

I don't have any fancy recipes (LOL), but I like this recipe:

Fruit smoothie
makes 2 regular servings or 3 or 4 small servings
* 1 cup frozen berries
* 1 cup of milk or yogurt (it's really yummy with vanilla yogurt)
* 2 tablespoons instant pudding mix (we usually use chocolate or vanilla)
* optional: serving of soy protein powder or tablespoon of wheat germ or ground flax seed; if you want to make it more "nutritional"
Blend 30 seconds in a blender. Scrape sides, and blend again for up to 2 minutes, until fruit is fully pureed. Serve immediately.

I use the recipe below but with blueberries and peaches instead of apples and cranberries. The topping is DIVINE, especially with an added pinch of salt, cinnamon, and some chopped pecans. I just got a ton from a recent trip, too, so my freezer is bursting with them!

We just got back from MI and with tons of blueberries too. Love them just as they are but I was looking for something else this past weekend. I saw a note in an article that blueberries added to cornbread tastes great. I will be looking up a good cornbread recipe and adding some of these blues to it.
