Need a Diabetic Dessert Recipe TODAY!

My husband didn't tell me until late last night that a coworker was giving us a smoked turkey today. I want to make some goodies for them as thank you, but I just found out his wife is diabetic. I don't know any recipes for diabetics, so if you know any, please send them to me ASAP!!! I was thinking about making cookies, or a pie. I found some recipes on the internet, but I don't know how tasty they are. Thanks so much for the help!

So What Happened?

Thanks for the tips! I ended up making the Millionaire Pie from allrecipes.com. It looks great! I tasted the extra pie filling, and it was good. His coworker is always doing nice things for others, so I wanted to do a nice gesture for them. Thanks!

I know you already searched the internet, but thought I would mention that I just went to allrecipes.com and searched for "diabetic". It pulled up several recipes right away--one sounded super yummy! It was called Millionaire Pie for Diabetics. Check out that website and I bet you will find something that will work for you. I've found lots of great (& easy) recipes there.

My daughter has Type I Diabetes and she can eat anything she wants as long as it is covered by insulin. A cookie, a piece of fruit, whatever is handled the same way. It could be that this woman has Type 2 Diabetes which is very different and a recipe lower in sugar would be beneficial...just something to think about!

I agree with Sarah, don't sweat over something new and untried as a thank you.

A basket of fruit or a nice potted poinsettia would be very nice.

What about a basket of fruit instead of a dessert, especially if you haven't tried the recipe before. My dad has been a diabetic for 15 years and although he appreciates when people try to fix something just for him, sometimes all he wants is some fruit and he's happy.
