Looking for a Broccoli Cheese Casserole Recipe

I am looking for a Broccoli Cheese Casserole that can be made with no mayo, mushrooms, or onions. I am allergic to mayo, my son is allergic to mushrooms and onions. I can use like cream of broccoli soup or cream of chicken but I need a good recipe for Thanksgiving...someone please help me out!

Hi L.,
Here's an easy one I make all the time and my family loves it.

About 2 cups of broccoli (steam it if you wish... I like it pretty firm, so I toss mine in raw)
One cup of cooked rice
About 2 cups of grated cheese
One can of soup (cream of mushroom, cream of celery, cream of chicken... whatever you like)

Mix all ingredients in casserole dish, sprinkling a little extra cheese over the top. Bake at 350 for 15 minutes covered and 15 minutes uncovered. Enjoy!

ok I have one
3 cups cooked rice
2 chicken breasts cooked and chopped
1 package broccoli florets
2 cans broccoli cheese soup
1 cup sour cream
1/4 cup lemon juice
1 tbs garlic powder

In a baking dish layer rice, chicken then broccoli. Mix soup, sour cream, lemon juice and garlic powder well and spoon over top of layers. Top with shredded cheddar and bake 350 for 45 min

Not sure it will taste the same but why not use the old fashioned broccoli, rice and cheese casserole and instead of using mushroom soup use cream of chicken?? just cook the rice, broccoli and then add them in a casserole dish with cream of chicken soup, butter and velveeta cheese. Bake at 350 until the cheese melts. Have a wonderful Thanksgiving!

We just make a cheese sauce with shredded cheddar cheese or use a can of cheese soup, pour over broccoli in a casserole dish, cover and bake.

Another recipe I was always asked to make at our carry in lunches @ work in MO is:

1 or 2 bags of frozen broccoli, cauliflower, carrot blend thawed out
Enough butter or margarine to grease a skillet
One half pound of American cheese per bag of veggi's
Grease a casserole dish with non stick spray
put the thawed veggi's in.
Melt the butter in skillet, and cheese (I usually cube up several slices at a time, it melts easier) When cheese is melted pour over veggi's and bake @ 350F for 30 minutes. The last 15 minutes take a sleeve of ritz style crackers and crush up, add enough melted butter to cover the crackers and put this on top of the veggi's. bake for 10-15 minutes longer. (Before adding the crackers make sure the veggis are done. I think you could substitute all broccoli for the mix of veggis. You can use fresh also if you prefer.

1 lg pkg chopped broccoli cooked and drained(not too much since you are going to bake it) May add some butter to season if you want.
2 cups sharp shredded cheddar cheese
1 can cream of something soup(chicken, broccoli, etc)
1 cup sour cream (instead of mayo)
a box of stove top stuffing(my Mom's secret ingredient)
mix all ingredients and bake in a 9 x13 inch dish sprayed with PAM at 400 till top is browned and cheese melted.
This goes quick at Church Homecomings and family reunions!

This one is so easy and my kids LOVE it!

Broccoli Casserole

2 packages frozen Broccoli florets
8 oz Velveeta
1 stick Butter
1 sleeve Ritz Crackers

Melt 1/2 stick butter in pan. Melt cheese in microwave. Cook broccoli according to package directions. Add broccoli to cheese, stirring to distribute the cheese. Pour broccoli and cheese mixture in with butter
Crush crackers and sprinkle over top. Bake at 325° for 20-25 minutes until crackers brown a little.

This is a quick and easy. I have used both cream of broccoli AND cream of celery. Both are good.

1 lb bag of frozen broccoli florets (for some reason frozen works better)
8 oz (or more if you like) bag of sharp cheddar cheese
1 can cream of broccoli or celery soup (cream of chicken would probably work well too)
1 package bread crumbs (seasoned or not seasoned)
4 tbs cup butter
salt and pepper to taste

Cook the broccoli florets to the bag specifications, and drain. Mix cheese, salt/pepper, and soup into broccoli. Melt butter and mix into bread crumbs. Sprinkle bread crumbs on top and bake at 350 for 30 minutes or until golden brown. You can even put cheese on top and melt during the last 5 minutes of baking. The more cheese the better in my house!

Broccoli Rice Casserole

1/2 cup chopped celery
1 stick margarine
1 can cream of celery soup
1/2 cup water
1 ( 8oz.) jar of Cheez Whiz or Velveta
2 ( 10oz.) pkg. chopped broccoli, thawed
1 ( 7oz.) box Minute Rice

Saute celery in margarine. Combine soup, water and cheese in saucepan. Heat over low heat until cheese is melted. Thaw broccoli. Cook rice according to package directions.
Combine all ingredients and place in 2 quart greased casserole. Bake 350 degrees for 45 minutes. I also add graded cheddar cheese on top before I bake.

You might check out the Campbell's soup website. They make a cheddar cheese soup and cream of broccoli soup you could use.

this one is amazing and so easy!

3 (10 ounce) packages frozen chopped broccoli, thawed, drained
3/4 pound VELVEETA Pasteurized Prepared Cheese Product, cut up
36 RITZ Crackers, coarsely crushed, divided
1/4 cup butter or margarine, melted

Preheat oven to 350 degrees F. Mix broccoli, VELVEETA and half of the crushed crackers until well blended.
Spoon into 2-quart baking dish. Mix remaining crushed crackers and butter; sprinkle over broccoli mixture.
Bake 45 minutes or until heated through.

I generally make this with onions and mushrooms but this substitutes just fine.

2- 10ounce box chopped broccoli
1 bag Instant Rice
1 can cream celery soup
1 can water chestnuts (chopped finely)
1/2 cup finely chopped celery
1/2 cup milk
big block velveeta cheese (sliced approx 1/4 inch thick)
ritz crackers (crushed finely)
butter

boil broccoli and rice (drain); sautee water chestnut and celery in butter until softened; mix cream of celery soup with 1/2 c milk (I warm it); mix it all together; line 13x9 casserole dish with mixture; place velveeta slices over mixture, then layer mixture over cheese, then cheese over mixture; take crushed crackers layer over top layer of cheese and drizzle melted butter over crackers.

Bake covered 350 for 30 minutes.

I am so sorry I do not have a Broccoli/cheese casserole for
you. But I do have a small suggestion.

I make "Milk" now and then using artificial creamer. One can
make whole "milk" using half creamer and half hot water. One
can make half and half using 1/4 creamer and hot water. I say hot water because that is the temp of the coffee or tea
we put the creamer into. Using 1/2 creamer and 1/2 hot water
should help flavor and thicken a casserole. Does your family like Garlic? We love it!! You might check into Mrs. Dash and see what it contains ~ ~ ~ probably onion !!

I know this won't help you for today, but maybe another time !!
Hey, what is wrong with hot broccoli with grated cheese sprinkled over it to melt?? I know, you want a dish that
will cook itself in the oven !!!

i get 2 bags of birds eye frozen broccoli florrets, i package of sliced american cheese (not the cheese product whatever that means!)its in a blue shiny package. cook the broccoli then melt the cheese on the stove with a little milk and make as much cheese as you all like we like alot normally 3/4 the package and then add broken up townhouse crackers on top. super easy and good!
