Someone just sent out meatloaf thoughts; which were sooo exciting to read today, and sooo as I was typing my two cents worth on my Italian Meat Loaf, I thought about Looking for different Lasagna ideas that do NOT include cottage cheese!
My husband hates cottage cheese and so this is how "I" make our lasagna, which is yummy, but just need a new idea for something fun! Enjoy ours, and send me yours!

BROCOLI LASAGNA:
Cooked Lasagna Noodles
Shredded Mozzerella Cheese
Sliced Provolone Cheese (the layer in middle)
Italian Sausage
Broccoli crowns cut in slices
Italian Stewed Tomatoes or Diced

Cook Meat. Layer all the ingredients ending with tomatoes and cheese on top. I usually have one layer that is just cheese and the noodles in the middle for my FOUR year old. Use Sliced Provolone or your favorite white cheese.
Cook for 45 min or until Brocoli is tender.

Okay..... now send me YOURS! Hubby likes it less juicy and messy so this is yummy, but we are bored with ours. Can't wait for all the new recipes@!

So What Happened?

YEAH, I'm Soooo jazzed to get started on some of these thoughts. NEVER thought to use cream cheese, so that we will try first. Loved all the help, and actually realized that what he doesn't like IS the orginal Ricotta and / or even the cottage cheese as well. He loves my lasagna the way we have always had it, but am so excited to try some of the new spins on it in the next couple of days. Looking forward to doing the one with spinach and cream cheese, we DO like that combination with other things, so that sounds yummy. Thinking of doing fresh spinach though as one layer with cheese, and then maybe even some sundried tomatoes....Oh, I'm so excited now that I am armed with a fresh perspective. Thanks so much ladies, I just KNEW you all would come through!

I make lasagna with cream cheese!

Layer lasagna noodles, sauce (I use Prego), slices of cream cheese, motzarella.

It's yummy!

Try Rachel Ray's Winter White Lasagna (just google it). I use 1 lb turkey sausage mixed with 1 lb ground turkey instead of the chicken apple sausage -- and it is still plenty sausage-y!

Personally, I process the cottage cheese in a blender or food processor first so that it looks like ricotta and you don't have the clumpy curds to deal with. It just spreads better.

My son also hates cottage cheese, but he ate this lasagna twice and didn't know it was in there ... until the third time, when he saw me put it in the food processor, lol!

Still, when I don't want to use cottage cheese at all, I combine 3 cups of ricotta with 1/2 a block of cream cheese and use that instead.

I'm a native Brooklyn,NY Italian girl and grew up on good lasagna! I usually substitute ground turkey meat for the sausage and use jarred spaghetti sauce if I'm really in a hurry! It's also a less 'juicy' lasagna so I think your husband should like it.

LASANGA

Brown:
1-lb. Ground Chuck
2 T. Salad Oil
1/2 C. Chopped Onions

Add this to browned mixture:
1-1/2 tsp. Salt
2 T. Sugar
2-1/2 C. Tomatoes
1 C. Tomato Paste (6 oz. can)
1/2 tsp. Pepper
3 T. Minced Parsley
1/4 tsp. Oregano
1/2 C. Parmesan Cheese
OPTIONAL: 1--GREEN PEPPER

Simmer all of the above for 30 minutes

Wide Lasanga Noodles
3/4 lb. Mozzarella Cheese

Cook wide lasanga noodles as directed on package.
Use only enough for 2 layers for a 9" x 13" pan.

Arrange layers in baking dish starting with noodles, the sauce, mozzarella cheese. Then another layer of noodles, repeat with sauce and mozzarella cheese.

Cover with foil.Bake for 45 minutes at 350 degrees.

*This recipe can be made ahead of time & frozen.
Cook: 350 degrees for 1-1/2 hours..if taken from freezer.

You can also double this recipe for more/thicker slices (9" x 13: pan), or keep recipe as is and place in a smaller container (such as an 8" x 8" container)to get thicker slices for fewer people.

I'm Italian and a former professional cook. REAL lasagna doesn't use cottage cheese, but ricotta cheese. You can find it in any grocery store's dairy case. Different texture & taste from cottage cheese. Add some chopped parsley to it and don't forget the salt & pepper

Don't use cottage cheese in Lasanga...........YUCK, don't blame him. The original recipe calls for Ricotta.

I know that this is very delayed, but I have been behind on reading my mamasource, and I am just getting caught up today. This is a recipe that I got from my sister-in-law, it is so easy and it is one of our favorites!

Spaghetti Caserole:
Spread 1/2 package of cream cheese on the bottom of a caserole dish
Add a layer of cooked spaghetti noodles
Then add layers of spaghetti sauce, cooked hamburger, dallops of sour cream, and shredded cheese
Another layer of noodles, and then top with the sauce, hamburger, sour cream and cheese.
Bake at 400 for about 30 min.

I just made a "new" lasagna for our household the other night. I used a recipie for manacotti filling, and threw in some chicken as well. Here is the recipie...

3 egg whites
15oz ricotta cheese
1 cup mozerella
2 cloves garlic (1/8 tsp garlic powder = 1 clove, that's what I use)
spinich (as much or as little as you want I use half a 10oz bag of frozen, after it thaws some)
1/3C parmesan cheese
tomato sauce about 1-2 cans depending how much you want
1lb cooked chicken

I just mixed it all together, layered the filling with lasagna noodles and tomato sauce instead of filling manacotti shells, and topped with more cheese! cook at 350* for 20-30min. My family liked it!

I haven't gotten a chance to read the other responders but we have tried this in the Crock Pot, YUMMY

1 lb lean ground beef (or ground turkey)
1 (26-28 ounce) jar pasta sauce
1 (8 ounce) can no-salt-added tomato sauce
8 uncooked lasagna noodles
1 (1 lb) jar alfredo sauce
3 cups shredded mozzarella cheese (12 oz.)
1/4 cup grated parmesan cheese

In large skillet, cook ground beef over medium-high heat until thoroughly cooked, stirring frequently. Drain.
Spray 4 to 5-quart slow cooker with nonstick cooking spray. Spread 3/4 cup of the tomato pasta sauce in bottom of sprayed slow cooker. Stir remaining tomato pasta sauce and tomato sauce into ground beef.
Layer 3 lasagna noodles over sauce in slow cooker, breaking noodles as necessary. Top with 1/3 of the Alfredo pasta sauce, spreading evenly. Sprinkle with 1 cup of the mozzarella cheese. Top with 1/3 of the ground beef mixture, spreading evenly.
Repeat layering twice, using 2 lasagna noodles in last layer. Sprinkle Parmesan cheese over top.
Cover; cook on Low setting 3-1/2 to 4-1/2 hours. If desired, cut into wedges to serve.

Lasagna noodles
Prego sauce
Mozzerella cheese
Hamburger
Summer sausage

Cook hamburger. Cut up sausage. Start layering. Follow cooking directions on the noodles box. We also started adding one layer (usually the first one) with cream cheese and spinach (warm up cream cheese and add frozen spinach until mixed well). It helps cover up the spinach flavor.
