Just wondering what to cook, that is easy, that goes with Tilapia and salmon. Any other suggestions on ways to prepare it are helpful too.

I steam broccoli and make an Uncle Ben's herb wild rice from the box very often with salmon (broiled or grilled). My 6 yr old picky daughter and my 22 month old twins eat it without complaint.

Are you looking for a side dish or different ways to prepare tilapia and salmon? If it's the latter, I cook salmon cajun-style. I have two different types of Creole seasoning from New Orleans (Tony Chachere's and Rex),but use whatever you have in the cabinet. I heat a pat of butter and some olive oil in a non-stick skillet and cook the filets medium-high for 5 minutes on each side (I like mine a little blackened). I serve it with plain white rice and a green vegetable to offset the cajun spices (the more you put on, the spicier it will be and we like it very spicy). It's the easiest, healthiest, tastiest 10-minute dinner I have in my arsenal.

You can make an individual foil packet with the fish, seasoning, a little olive oil, and veggies ( zuccini, yellow squash, red pepper, string green beans etc). Bake for maybe 15 minutes. Then just make some rice to go with it. ALso go on to Red lobsters website. They usually have some of their receipes on there. I have one ( Tilapia in a Bag) that I have yet to make, but it is delicious at the restaurant.

As far as salmon goes we cover a baking sheet with foil then I smear some I can't believe its not butter on both sides and put lemon pepper seasoning on it. Thats all. 400 degree oven for 20-30 mintues.

I Love Trader Joes Fish. I buy thier stuffed Flounder with crabmeat&chees and the stuffed Salmon with Dill and cucumber. They are each $2.99 each filet. The fish is so fabulous that it is something you would seriouly pay $18 for at a resturant. I usually just steam brocolli for a side. The filing in the fish is so filling you really don't need anything else. But roasted Potatoes would be nice with this dish too. You can find both of these in the freezer seafood section in Trader Joes. ALl you have to do is thaw in fridge for 24hrs - put fish on an oiled baking dish and cover with foil - bake for 25 min. I like to add a little of TJS tarter too. It is the best tarter sauce I have tried.
