Chicken Thighs and Tomato Soup

Just dropped my son of at the HS for a band competition. Planned a day of housework and cooking for myself. But, my pantry is slim pickings right now - and I don't want to go to the store. :)

So, I am turning to you cooking mamas for ideas. I took out a pack of chicken thighs to defrost (bogo on thighs and legs at my local grocery last week). In my pantry I have canned tomato soup and canned yellow hominy - why, I don't know - neither product do I use. I have garlic and vidalia onions and a host of seasonings and spices in the house along with tons of frozen veggies. I have penne pasta and rice in the house also - but am leaning towards the pasta since my son doesn't eat much rice since he got braces. :(

But the big question is what do I do with all this stuff? My cooking has been less than inspired lately and I looked on AllRecipes.com and found nothing that wasn't mexican - and I am looking for something different.

So bring on your easy, limited pantry ideas for chicken please please please.

So What Happened?

Happy to say that I got a ton of house work done today :) not so much cooking.

I browned the chicken well in olive oil, then browned onions, added garlic, rosemary, thyme, bay leaves, red pepper flakes and salt, a can of tomato soup and tony saschary's rue.

I plan to serve it for lunch tomorrow over penne pasta. It smells really good.

Sue H - we are living parallel lives!! We have another competition next Saturday, then the week after - along with Friday night football games, and twice weekly practice. I had no clue what HS band entailed. LOL

Go to www.food.com and use the recipe sifter. It will allow you to find recipes that can be made with the ingredients that you have on hand.

I use a broiler pan when I bake my thighs so that the fat can drip to the bottom and it's not swimming in grease.

Srinkle chicken with salt and pepper, marinate in olive oil, lemon juice and seasonings of your choice, or Itallian dressing if you have it. Place on a broiler pan and cover with garlic and onion. Bake uncovered at 350 for an hour.

Cook pasta and set aside.

Saute frozen veggies in olive oil, with garlic, onion, oregano, basil, and whatever spices sound good. Toss in pasta with a tiny more olive oil and whatever cheese you have like, parmesan or feta.

Voila! Dinner.

My son is also at a Band competition. I have chix thawing. !!!

My plan for dinner: crockpot soup. I'm going to bake the chicken 1st. Then I'm going to throw the chicken, some onions/garlic, vegies, canned tomatoes into the crockpot. I haven't decided if I'm going to use Mexican, cajun, or Italian seasoning. Leaning toward cajun, because I do have a box dirty rice which I can throw in there, too (or make separate & pour the soup over it).

I live in MO & it's a colder day today. My son's not going to make it home until either 10pm or 1am....depending on whether they make it to the finals. I figure either way a hot bowl of soup + bread will hit the spot for him....& warm him up inside/out! Enjoy today.....

I would do something interesting to the chicken, I usually have some sort of sauce stuff in the fridge like BBQ, Teryaki, Worcestershire, some sauce or another. marinate the chicken for at least half an hour then cook it in a skillet or bake it. Make some over steamed rice and use some other fresh stuff as a side.

Oven steamed rice:

2 cups boiling water
1 cup long cooking white rice
1 ts. salt.

Put in a heat proof bowl with a lid and bake at 350 degrees 30-35 minutes. fluff with a fork and it is perfect every time. I use a Pyrex clear glass bowl with the glass lid. It seals enough to keep the moisture in.

If you were in the mood for hominy or mexican- I'd say make something like tortilla soup.
For dinner last night we had chicken stir fry with vegetables and teriyaki sauce. If it's going to be a leftover, store it before adding the sauce and then you can add a different seasoning(such as italian) when you reheat it. We had leftover rice from another night and turned it into fried rice by adding scrambled egg, frozen peas and carrots, and soy sauce.

My Gram used to make Chicken in the Pan:
Put onion slices on the bottom of the pan.
Put chicken on top.
Sprinkle with garlic, parsley, oregano or whatever else moves you.
If you have a can of stewed tomatoes, put that over top, too.
If you have some potatoes, cut them into steak fries and put them in the bottom of the pan around the chicken. Sprinkle them with spices, too.
Bake until done... It will turn golden brown and be oh so juicy.
Serve with veggies and a side of pasta with butter and cheese.
