My all time favorite cake or cupcake recipe is the Hershey's Deep Dark Chocolate cake recipe. It's on the Hershey's website. I think it is the use of boiling water that makes the difference. It makes the chemical reaction work differently, quicker, so the cake stays very moist and raises very high.

It is so moist and is never dried out. I do NOT use dark cocoa. I use regular, normal cocoa and I think it turns out just fine.

There was once one that I really liked too. It had a regular chocolate cake mixed up then you filled the cup about 1/2 full and plopped a bit of a cream cheese mix in it then topped it off with more chocolate cake mix. It was called cream cheese filled chocolate cupcakes or something similar to that.

My hubby likes chocolate chip cookie dough cupcakes. I made one similar to this, but we used the tollhouse recipe for the dough (with mini chips) since that's his fave. http://allrecipes.com/recipe/chocolate-chip-cookie-dough-...

My favorite it white chocolate with raspberry in the middle. You make a basic white cake mix and then add some melted white chocolate (6 oz. or so). Bake the cupcakes like normal. When they are cooled you cut a cone out of the top and then fill with a little raspberry jam. I don't like soggy cupcakes, so I usually butter the cupcake hole with a bit a buttercream frosting before I add the jam. My kids prefer triple chocolate. Chocolate cake with mini chocolate chips added topped with chocolate frosting.
