Anyone have a really good banana bread recipe that has NO nuts involved in it??

I've tried a few in the past that I found online, but they weren't really that good.

And I've been craving banana bread for the last few days! All the store bought stuff has nuts in it (ewww).

Wooo! I'm gonna try out a few of these different recipes this week/weekend!

I had to buy more bananas at the store lol Hopefully my daughter doesn't eat them all before they can get really ripe!!!

this site has lots of recipes and lots of reviews (I love the reviews, it really helps sell me on certain recipies). I get lots of ideas here:

1 cup sugar
1 stick of butter (softened)
1 tsp vanilla
2 eggs
1 1/2 cups flour
1/4 buttermilk
2-3 ripe bananas
1/2 tsp salt
1 tsp baking soda

Mix butter, sugar, vanilla and eggs together until creamed. Mix in remaining ingredients. Put in loaf pan and sprinkle a little brown sugar on top and cook in a 350 oven for an hour and 5 minutes.

If you make muffins cook at 425 for 25 minutes

I usually put chocolate chips and strawberries in mine. My family loves it!

I have tried many recipes and this is the one I keep going back to. It's from one of those church cookbooks. I get requests from people to make it all the time because they LOVE it! The kids love it for an afternoon snack.

Banana Bread
1/2c butter
1c. sugar
2 eggs
1/4c milk (I use half & half)
1c. banana, mashed
1 tsp vanilla extract
2c flour
1 tsp baking soda
1/2 tsp salt

Preheat oven to 350 F. In a large b owl, cream butter and sugar. Beat in eggs. Stir in banana, milk and vanilla. Add remaining ingredients and stir by hand. Pour into 2 greased bread pans. Bake 50-60mins. Remove from pans to cool.

i know you already got a lot, but this one is VERY GOOD:

2 1/2 c. flour
1 c. sugar
3 1/2 t. baking powder
1t. salt
3 T salad oil
1 c. mashed banana
1 egg
1 c. chocolate chips
3/4 c. milk

mix all together in a large bowl. bake 55-60 min at 350 degrees. put into greased and floured loaf pan. you can also use muffin pans and make this into muffins. takes much less time to cook!

Any recipe that includes nuts is usually optional.
Just use the same recipes you have without nuts! After all most recipes say nuts are optional it doesn't add or take away from the basic bread part of the recipe. You might add raisins or chopped dates etc.. if you like them instead of the nuts.
Though I have to say I love nuts!

I use the Betty Crocker recipe in my cookbook and the nuts are optional. I love nuts, but since I also never have them when I'm craving banana bread (or those last few bananas are just looking too squishy) I never use nuts. I really like this recipe and my kids devour it:

1 1/4 cups sugar (I mix a bit of brown so it is not all white)
1/2 cup butter (softened/room temp)
2 eggs
1 1/2 cups mashed ripe bananas (about 3 med. bananas)
1/2 cup buttermilk (I use the powder since anytime I have real buttermilk in the fridge I drink it all!)
1 teaspoon vanilla
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup chopped nuts (OPTIONAL--I never use them)

1. Preheat the oven to 350 degrees with rack on lowest setting. Grease bottoms of 2 loaf pans.

2. Mix sugar and butter in large bowl. Stir in eggs until well blended. Stir in bananas, buttermilk, and vanilla. Beat until smooth. Stir in flour, b. soda, and salt, just until moistened. Stir in nuts. Divide batter evenly between pans.

3. Bake about 1 hour to 1 hour 15 minutes, until toothpick comes out clean. Cool 10 minutes in pans on wire rack.

4. Loosen sides from pans and remove. Place upright on racks to cool completely, about 2 hours. It slices better if completely cooled, but we never wait that long. Can store at room temp well wrapped for up to 4 days, or fridge for 10.

On allrecipes.com (http://allrecipes.com//Recipe/Banana-Crumb-Muffins/Detail...) there is a recipe for Banana Crumb muffins. Almost 6,000 people gave it a 5 star rating. You could bake it in a loaf pan at 350 deg. for 1 hour. I prefer muffins, because then I can make a huge batch and freeze them for the family for breakfast and snacks. I don't usually add the topping - its good, but don't need the extra calories. So, I put sprinkle some cinnamon in the batter. I also, for a double recipe put in the zest of one lemon and its juice. It makes them much lighter.

This is really easy and really yummy.
3 very ripe bananas, one stick of butter (melted), 2 T water, 2 eggs, 1t baking soda, 1/2 t salt, 1 cup sugar (brown or white) 2 cups flour (white or whole wheat) 1 t vanilla you can also add 1/2 t cinnamon or nutmeg if you like.
Mix up the butter, eggs and water with the hand mixer. Add the rest of dry ingredients and beat til it's all wet. This recipe fits into 3, 4 x 6 loaf pans or one large loaf pan or you can use a muffin pan. Spray pans w/ PAM or grease with somethng. Bake at 350. 3 loaves take about 40 minutes, one large about an hour...muffins take about 20 minutes. Just bake until golden brown and check that the top is firm. Thses loaves also freeze well. Enjoy!

By the way. If you have a couple of bananas and you don't have time to make bread, peel them and squish them up on a Ziploc bag and freeze them flat. You can pop them out of the freezer and run hot water over them and make your bread.

It never fails. I have only one or two brown bananas (not enough to make bread with) and found this works GREAT! Make sure you get out as much air as you can and mark how many bananas are in the bag.

There are lots of great recipes, but in my opinion, the secret is slightly over-ripe bananas. Or super over-ripe.
I make banana bread to use up the ones that are a little too mushy just to eat on the run or put in a lunch.
They make the bread more moist.

I love my grandmother's recipe. I wish she were here to know how often I make her bread! It's one of my favorites. And I don't bake much!

1 3/4 C flour, 1/4 tsp baking soda, 1 C ripe mashed bananas, 2 tsp baking powder, 1/4 tsp salt, 1/3 C butter (softened), 2/3 C sugar, 2 well-beaten eggs

sift together (I just stir I have never, ever sifted) flour, baking powder, baking soda and salt in one bowl. In another bowl, cream butter and sugar, then add eggs. In another bowl mash bananas.

Add flour mixture to the sugar/butter/egg mixture alternately with the bananas. Turn batter into greased loaf pan. Bake at 350 for 45 minutes or until done.

As soon as it comes out of the oven, I turn the pan over and dump it out onto a cooling rack.

(fyi - super over-ripe bananas make the bread too dark. I use ripe bananas but not overly mushy ripe.)

And now that I write this I see I have ripe bananas, so..... I think I'll make some too!
