I would say vet or animal control officer to discuss safety around animals - be a tree, don't pet strange animals, etc.
A farmer to discuss where food comes from
A local artist
a musician to share musical instruments
a weaver who could help them make something

Vet- talking about taking care of pets
Artist- make & do/ sensory

Puppeteer- not sure where you would find this, but they would love it

Maybe a kids' art teacher to show parents how to do some at-home crafts for various age groups

Here in Austin the City Fire dept has a traveling Burning house..
You get inside and they explain how to react.. Pretty cool.

You could also contact a Yoga instructor to come and show you how to do some yoga at home with children . Have them bring their business cards to hand out. Many studios have a family yoga class.

Maybe a Gardening expert to speak about best ways to do a veggie garden in your part of the country..

Nutritionist to talk about healthy snacks for the family.

A topic for Police would be the importance of wearing a helmet when bike riding. Stranger danger. For Fire, fire safety and having a plan of escape if there is a fire.

My daughters school had a chef come in to teach them how to make healthy snacks. The day before he came the school went on a field trip to the farmers market. My daughter still loves ants on a log. She wouldn't eat cheese before but now she loves it.

I'm not sure who this would be but someone who could talk about the differences in people. Sometimes it could be a person with a disability or of different faith or race. This would hopefully make it easier for kids to welcome kids that may seen different

How about a Mother/Daughter class on skin care & makeup? Knowledge is power! =)

Police and Fire departments are a great idea. Children in our area take a weeklong class called "Safety Town" before kindergarding starts, and I was most pleased with the fire safety, stranger safety, crossing street safety, etc. of what these departments provided. The children also pay attention to these men & women in uniform.

All of your suggestions are great as well as those suggested by the other moms, so far. I would also add a dentist and maybe even an eye doctor. (Both of my children have had their eyes checked this past year, even the baby!)
Let me know if you need help with finding specific contact people. There are several businesses in town (Barnes & Noble, Kroger, Fazoli's) that will even offer tours to playgroups. :)
