Cooking with Fresh rosemary...ideas?

I live in the desert and the only plant that grows in my yard is a HUGE rosemary bush. The only thing I have made with it is rosemary potatoes. Does anyone have any other EASY ideas/recipes? Minimal ingredients is a bonus...I'm not a great cook! Thanks!!!

Stick some branches under the skin of a chicken and roast it.

Cook white beans (cannelini) with olive oil and rosemary.

Chop some up and make a balsamic vinaigrette (dijon mustard, salt, pepper, rosemary, balsamic vinegar, olive oil)

I make an herb coating for pork tenderloin with rosemary in it (along with parsley, oregano, sage, and whatever else you want to throw in it).

I have 3 good ones.

1) Rosemary polenta:
Make your own polenta or just buy pre-made. Cut into 1/2" slices. Spray a cookie sheet with cooking spray and put the polenta slices onto the sheet. Bake at 400 for about 10-12 minutes. Then turn the slices over and top with chopped fresh rosemary, garlic powder, black pepper (I do some without pepper for the kids), and grated parmesan cheese. Bake until the cheese melts, then throw the broiler on at the end for a minute to get a nice brown on the cheese. MMM

2) Rosemary salmon:
This is SO easy. Take 2 salmon fillets, put them into aluminum foil. You'll need the foil to be big enough to close completely around the salmon. Top the raw salmon with a whole sprig of rosemary, a few lemon slices, and a couple of pats of butter. Fold up the foil and bake about 12 minutes (just until you see the fat start to come out of the fish) at 375-400. Cut open the salmon in the middle to be sure it's fully cooked. If it's still too pink, bake another 2-3 minutes.

3) Edamame and bean salad with rosemary:
Ok it doesn't get any easier than this one! Take one package shelled edamame and pour into a large bowl. Drain and rinse a can of white kidney beans and add to the bowl. Saute 2 chopped cloves of fresh garlic in a couple of TBL of olive oil. Once you smell the garlic, turn off the heat and add 1-2 TBL chopped fresh rosemary and stir together. Let sit for a few minutes so the rosemary soaks up some of the garlic oil. Pour the garlic rosemary mixture into the bowl with the beans. Add some black pepper to taste and as much feta cheese as you like. Yum!!!

We put it in roasts, use the stems as skewers for chicken (so yummy on the grill!), put it in pasta sauces, etc.

Try to only do 1 a week, or you'll get sick of rosemary :)

And don't forget the sweets! Rosemary & Strawberries, Rosemary & Orange and Rosemary & Pear are *lovely* combos

Rosemary and Chicken work beautifully together. Chop it up, drizzle chicken with olive oil, sprinkle with salt pepper garlic and rosemary. Roast in the oven.

Good with Lamb or pot roast, or you could add pine nuts and rosemary to cous cous, yummi!

Also look at allrecipes.com for rosemary chicken or potato bake. You can use them in many Italian dishes, including pizza and pasta dishes.

Great on rice.

Saute the rosemary in unsalted butter. Add garlic or shallot if desired. Toss with a fresh pasta. It's nice crushed in marinades, cooking oils, or salad dressing oils. Stuff a pork tenderloin with cheese (goat, bleu...) and rosemary mixed together - cut the tenderloin down the center without cutting in two. Mix the cheese and rosemary together and apply down the center. Tie the tenderloin back together and bake or grill. Alternatively to cheese you could use stuffing.

I make potatoes with them too.

But I also love roast, I insert garlic slices in it. Drizzle it in olive oil, rub on salt and pepper and then top with an insane amount of fresh rosemary. So good.

Rosemary can be good in bread, or on lamb or over cut red potatoes baked with olive oil.

I snip it and sprinkle it over pork chops or chicken and bake.

It's also good added to spaghetti sauce.
