I would like to cook these meals in advance on the weekends and maybe freeze some so I can just pop them in the oven when I get home. I guess cassarole-type meals would work best, but I am open to any easy recipes. The only thing we do not eat is bell peppers (other peppers are fine). My son is a great eater. His favorite food is sushi so recipes do not need to be kid...
