Made this on Monday for the first time, hubby said it was addicting:

1 can of black beans
1 can of corn
1 jar of favorite hot/picante sauce
3-4 chicken breasts ( I used frozen)
1 or 2 8 oz. cream cheese (depending on how cheesy you want it)

Put first four ingredients in crock pot.The recipe doesn't call for it, but I sprinkled a little taco seasoning on the chicken. This cooked for about 3 hours on low then I added the cream cheese... I used two. I cooked on low for another hour and then turned crock pot on warm.

Serve on tortillas or your favorite rice. We did both. I use Basmati rice and add cilantro. It was really good!!! Good Luck!

2 lbs Pork Tenderloin Roast
1 pkg Lipton Dry onion Soup mix
1 c water
3/4 C Red wine (or broth)
3 tbsp freshly minced garlic
3 tbsp low sodium soy sauce
black pepper
Combine soup mix, water, wine, soy pour over roast, "smear" garlic into roast
3-4 hrs on high in slow-cooker or 6-8 on low

So easy and sooooo yummy! My husband didn't start out loving the crockpot either but considering how many great home-cooked meals he's gotten because of it, he's coming around. This one is probably his favorite. I've also given this recipe to several of my friends and their husbands have all liked it as well. Good luck! =)

Tell hubby slow cooker saves $$$. 1) it is ideal for cheap, tough cuts of meat that need to cook low and slow - saves you $ because you can get away with cheap cuts of meat. 2) Takes less energy to cook, because you don't have to heat the entire oven 3) you don't heat the whole house up by turning on the oven, so, saves you $ on the ac. It's also nice to have dinner waiting for you when you walk in the door after work.
I have 2 "recipes" although no recipe is necessary. Crockpots are foolproof. A little meat and a little liquid. A veggie or 2 and voila!

My moms Lipton Onion Soup Pot Roast - I think everyones mom made that. The recipe is even on the box. Just a roast, onions, potatoes, carrots, and lipton onion soup mix. It's a great Sunday dinner any day of the week.

I like to make a beef brisket. I'm from Texas - Ya'll make pork if you like :) You can put an acidic liquid - a can of coke, dr pepper, root beer, real beer or whatever liquid you want plus some seasoning - salt, pepper, garlic of course, and whatever else you want. When it's done you have versatility. You can cut half of it in chunks and thicken the liquid on the stove with cornstarch or flour to make beef tips to serve over noodles or rice. With the other half you can shred it with 2 forks and add a little bbq sauce to make bbq brisket sandwhiches. Or you can add salsa to make brisket tacos.

Place a whole chicken in the crockpot. Cover it with two packets of Lipton's Onion Mix and half a cup of water. Keep it on low all day and voile! It is not the most amazing meal in the world, but a whole chicken is almost two dinners in our house, the sauce is simple yet delicious, and you can cook some rice and veggies in with it if you really wanted to! Tell your hubby it will be a God send!

We like:

~1 Beef Roast
~6 Beef Bouillon cubes
~cut up carrot chunks
~potatoes (skin ON, cut in half if they are too big)
~water to cover everything
~season with pepper, garlic salt, onion salt, and seasoning salt (I just sprinkle a little of each)

I cook on low for 12 to 16 hours (more wouldn't hurt it).

Serve with Pillsbury biscuits warm out of the oven and honey! (I also make corn because my kids like the potatoes mashed on their plate with corn on top......)

YUMMY! My husband LOVES this meal!

I love making pot roast in mine. My BF doesn't like stewed veggies so I don't make it as much as I used to =(

ingredients:
potatoes - peeled and cubed
carrots - peeled, cut into 1/2 pieces
3 stalks celery
1 large onion
beef roast

optional ingredient:
2 cans Guinness beer

Heat skillet, salt and pepper beef roast and brown all sides in pan (just to add extra flavor). Place in slow cooker, add water (and guinness) until covered. Cook 8+ hours and add veggies, cook until veggies are done (usually a couple of hours).

Here is the thing, my mother used to cook the meat for less than 8 hours and to me it was a little tough. If you cook it for more than 8 hours, the meat falls apart and soaks up all the yummy broth.

I helped a friend of mine make this for her boyfriend on their 3rd date and they loved it... heheh and have been married for more than 5 years so I like to credit the pot roast =)

I do A LOT of cooking in the crockpot because my kids have activities almost every night of the week from spring through fall. I go to www.allrecipes.com to find some - they are rated with starts, so that you know you are getting a recipe that's tried and true. I also have the "Fix It and Forget It" cookbook, which I use a lot, also.
One of my favorites is your plain 'ol roast. I put mine in frozen, because it seems to be juicier that way. Add a package of onion soup mix and some stock (you can use beef stock), but I use a dissolved vegetable bouillon cube with about 1 1/2 cups water. Once the meat is done, you can eat it as a roast or you can add some southwestern seasonings and make taco meat! Last night I made roast and added some noodles for beef and noodles. It's so versatile!!!
I will have to say that the crockpot makes a difference. I used to have a crockpot that you could set to 4,6,8 or 10 hours. I could change it up or down depending on how the meal was cooking. The crock cracked (sounds like a tongue twister or something dirty......hee hee) and I replaced it with a cheaper version. The low setting seems to cook hotter and faster than my low setting on the old one, so it took some getting used to. Maybe the first time, stick around, so you can adjust it as needed. Once you know how hot and fast it cooks, you'll know when you need to start a meal if you are going to work or whatever during the day.
Chili, stews....awesome in the crockpot! I made lasagna the other night and it came out pretty good. As far as a knock 'em dead recipe, I'd look at the allrecipes site to see which ones got 5 stars. Be sure to read the comments to see if any of the submitters added/ subtracted to make it perfect. Good luck and happy crocking!!!!! (Oy, it's been a long day :)

I love making BBQ beef in mine.

Buy a 3-4 pound roast (not too fatty) and season it with kosher salt, black pepper, Simply Organic All purpose seasoning, fresh garlic (you don't have to chop it, just peel the cloves and toss them in), and a drizzle of Worcestershire Sauce; I like Lea&Perrins. Turn it on high for an hour to get it going then turn it down to low and let it cook for hours; I start mine by no later than 10:30 in the morning. Around 5, I use a pair of tongs and put the roast in a roasting pan (or a cutting board, just make sure you have something under it to keep juices from going everywhere.) Let it sit for about 10 minutes then use your tongs (or a fork) and start pulling the Beef apart. Try a small amount of the meat to determine if you need more of the seasonings. Then add it back to the slow cooker and douse it with your favorite BBQ sauce. (I like Masterpiece hickory-brown sugar) and let it simmer for about an hour to allow all the flavors to meld.

I serve them on Aunt Millie's Kaiser Buns that I toast; I spread a little bit of softened butter on them and broil them in the oven until they are just lightly toasted. For my side, I serve broccoli that is steamed with some butter and a touch of salt to enhance the sweetness and homemade fries. I take a few Idaho potatoes, scrub the skins and peel them (i don't like the skins) and then slice them not too thick, but not too thin either. Then I place them in a small pyrex baking dish that has some good extra virgin olive oil in the bottom, drizzle a little more over the potatoes, then sprinkle some kosher salt, all purpose seasoning and some Simply Organic seasoning salt (not a lot) to help give it some color; then I toss the fries in the oil and seasoning and bake them on about 350 until they are fork tender. Enjoy! I love my slow cooker!

If your hubby likes spicy (buffalo) chicken, here's a good one! This is a favorite of my hubby's:

I love this recipe too, but depending on the sauce you get, it is pretty spicy, so be warned. Good stuff though!

1 frozen pork tender loin or 1/2 pork loin (fresh is fine, but it's nice to just take something out of the freezer!)

1 can pineapple chunks or tidbits (including juice)

1/2 bottle cheap-o BBQ sauce

Put the pork in the pot, pour everything else over it, let it cook on high 4 hours or low for 8 hours.
Serve it over rice or egg noodles.

Another variation is a can of apple pie filling instead of the pine apple.

I love my slowcooker :)
We have 2 FAVE recipes that are always a big hit! (With kids and adults alike!)

BBQ Chicken:

1 package of frozen chicken drumsticks
1 bottle of your fave bbq sauce
1/4 c water

Add everything to the pot and cook on low for 10-12hrs or high for at least 6.
We eat this with tomato and basil salad and thick bread to soak up the bbq sauce :)

Black Eyed Peas & Hamhocks
(this is a def receipe fr the South and I grew up in CA but my SIL passed it to us and the flavor is amazing!)

1 package of smoked hamhocks (I get mine in the deli section 3-4 pieces)
1 package of dried black eyed peas (rinsed)

Lay peas in the bottom of the slow cooker and add hamhocks on top. Cover with just enough water to cover the top of the hamhocks. Cook on low 18-20 hours or high for 10 hours. The longer this cooks the better! I usually put it on at night around 8 and its ready by 4ish the next day :) Or I've put it on high at 9a and we've eaten at 5.

Good Luck and tell your hubby to give it a chance :D

I make Stone Soup in mine most of the time. There is a book more modern than the very old version of "Stone soup". We made it all the time at my child care center. I would read the book several times throughout the week then we would make the soup on Friday. I had a river rock I used as the stone, it has been washed in the dishwasher many, many times. We generally followed the book but I added some stuff into the mix when I could. I put onions in the meat when I cooked it, I used the small cut vegetables from Veg-All with Lima Beans and other yummy things kids won't normally eat. I also add small cut sweet potatoes from a can and extra corn and green beans. My secret ingredient is Mild Ro-Tel tomatoes.

I think this is the version I read, we had several styles of the story and I think this was the one I liked the best.
