Deer Sausage- a Lot of It...

So my wonderful husband got us 7 animals this year while hunting. He promised me he got all kinds of meat made with the animals when he took it to get processed. Well, his definition and mine are obviously very different! lol!
90 percent of our deep freezer is filled with deer sausage, his favorite. (There were different animals, but, they were processed together, so, most of the meat is actually mixed with the deer.)
I got onto him for doing this last year, as I only know so much to do with sausage. We ended up giving a lot of it away, so, none went to waste. I just cannot believe he did this again! :P
Anyway, I need some recipes/ideas. It has a wonderful flavor, it reminds me a lot like Chapel Hill brand, if you know what that tastes like. I just want to be able to cook more of it than I did after last season, without having to give so much away again and continue buying meat from the store when I am burnt out!
He is hunting again this week, all I have to say is he better get another one so I can have some ground meat to cook with! ;)

Elle- LOL- yes, I know, why just sausage?! I'm still nagging him about that. He did this last year also, so, I don't know why he dared!
He said don't worry about him, and he will make his own sausage every day! HA, HA! Would be a hoot to try though.

I will try taking the sausage out of the casings and see how that goes for ground meat recipes. The problem is it already has some pretty intense flavors and spices added to it. It will probably be good with some recipes, but not all.

So What Happened?

Thanks for all of the suggestions everyone. I know this was a while back, but, in case you go back, I just want you to know that I have made something from every suggestion below! We are tired of sausage already. lol! So, taking a little break from it. It is April 1st now. But, I imagine in about a month or so, I will be making some more of the ideas below! :)

Why just sausage? There are other cuts of meat. Eat the good cuts and give him sausage daily until it is no longer his favorite :)

Mmmmmmm... I miss being engaged to a hunter. Being a "hunting widow" was always fun (girls time!), and then the meat.

THWACK that man upside his head, and go with him to the butcher until he can be trusted. Steaks, stew meats, roasts, ground meat plain, soup bones, you need things other than sausage!!! Thwibbt. Men!

Okay (sorry I had to join your vent, I had that year once).

Mario Batali. ((There are other great italian chefs, he just happens to be my fav, AND he has lots of sections in his books on using game meats -like deer- since in Italy people often eat a lot of game meats not commonly found in the US))

Italian food uses TONS of sausage in hundreds of different dishes. If they're in casings just slice the casings off and toss them (or feed them to the dog). Substitute the deer sausage for every call of italian sausage OR ground beed, pork, turkey. All you have to do is Add about 1 tablespoon of fennel seeds per pound of sausage to make it "italian deer sausage" if it doesn't have fennel already. Canneloni, lasagna, sausage and polenta, stuffed cabbage leaves, eggplant and sausage, stuffed peppers, meatballs.

Go "ethnic". Treat the sausage like you would ground meat, and add seasonings. Deer meet is pretty rich, so it can support a lot of spices. Some of my favorite things to "alter" sausage with are Kalbi & Cuban. Kalbi, BBQ, etc is easy, because you just knead it in. To alter it with a liquid like italian salad dressing, or cuban (Cubano add 1cup orange juice and 1/2 cup EACH lemon and lime juice, 1 table spoon of oregano, a pinch of cumin and cinamon, and a couple cloves of minced or pressed garlic). To marinate ground meat in a liquid knead 1/2 the solid spices into the meat itself, shape into the shape you want to eat (like a patty) fry it JUST enough to keep it's shape, and then marinate in the sour orange juice and other 1/2 of the spices fo a couple hours and then cook through. ((Do a test run on the deer, I didn't learn to cook cuban until after I lost my 'deer supply'. My suspicion is that it'll either be *fantasitc* or *terrible*.)) Kalbi, however, is a super food. It appears to go with everything. Possibly even socks could be marinated in Kalbi and come out delicious.

Of course, egg caseroles, pizza, quiches, hamburger helper, sloppy joes, etc are all other things to do with sausage.

I also like whole sausage in casings (either cut up or whole) that have been seared mixed with green peppers and onions with melty swiss for a "philly' sandwich OR mixed with potatoes for a "hash".

I guess you could slice sausage and put it in pasta recipes! Next year you should definitely go with him to the processor and have a definite plan for what happens to each animal. At the very least, send him with written instructions!

Not much help here. Just wanted to tell you I feel your pain! :0) My husband hunts every year and now has our 11 year old son doing it too. He makes his own sausage out of the deer and the pork combined. He even bought his own sausage stuffer to do it all himself. My husband smokes the sausage and seals it in those food saver bags. It is great just grilled. We haven't tried much other than grilling it but we go through a chest freezer full in about a year. Good Luck!!

Gumbo, Potato soup, cheese soup.. mixed bean soup, but use sausage instead of ham.
Make a pot of blackeyed peas and use the sausage instead of ham, serve over rice with a side of cabbage.. "Hoppin John"

Grill a lot of it and keep in in the freezer.. it can be microwaved for Sausage wraps, placed in buns with kraut and hot mustard.. Small slices with cheese, crackers and hot mustard.. for Superbowl snacks..

Cut it up in pieces and serve it with scrambled eggs and hot sauce for breakfast tacos..

My roommate and I used to make lasagna with the deer sausage our boss would give us. It was great, best lasagna I've ever had. You just have to take it out of the casing and cook it like ground beef.

My husband loves deer burgers. He always gets some made into patties. I guess you could try that as well. Like you said, some of the seasonings are pretty pronounced. I would start making everything with the sausage and see if he likes it that way.

I haven't made it with deer sausage, but once a week I make what I call "Sausage Rice and Beans." I sautee sausage (generally use 16 oz of Eckerich Skinless) with jalepeno and sometimes onion. Once veggies are done, add two cans of black beans. I spoon it on top of cooked brown rice and it makes for a yummy meal. We add tabasco to ours.

Another idea that was yummy when I tried it was queso with deer sausage (without casing probably). Mixed with breakfast sausage and a can of rotel, it's a great salty appetizer with chips.

Can you cut open the sausage casing and use the meat inside just as you would ground meat?

Definitely chili and a pasta dish - spicy canolli or a nice stew. You can always make a BIG batch, freeze it, and when you're not sick of eating it anymore, defrost the leftovers!
Mix it in with another meat - like turkey - to make burgers or meat loaf.

You can also take the casings off and make an omlette or fritatta breakfast dish with eggs and veggies.
If you are having a Superbowl/football/sports party - the sausage would be great in queso.
Coming from a former vegetarian....I could totally use some :) Texas does strange things to taste buds!

Is the sausage smoked? - guess not if you can take it out of the casings....was going to suggest cutting it up and putting it in Pinto beans after they've cooked and eating over rice (sometimes it's called red beans and rice but we like pintos better than kidneys).

Good thing sausage is good but I'd be ticked too. ;)
Oh, can you cut off the casing, crumble it and use it like you would ground beef?? Just take a sharp knife and skim the casing with the tip, it should peel right off.

We love this chili recipe for deer meet. http://allrecipes.com/Recipe/Chili-I-2/Detail.aspx I have used it with sausage before (just took it out of the casings like suggested below) and it still turned out great...although I didn't add any other spices besides chili until it was done and I could taste test. Often times when using deer meat I simply add about 1 3/4 - 2lbs of ground meat instead of what the recipe suggests. This one had a lot of ingredients, but it's rather simple once everything is added. I like it because it camouflages some of the gamey taste of the meat. I often cook it in the crock pot. And I will never complain again about my hubby processing his own meat. :)

7 animals worth of sausage? I would cry.
I won't even eat sausage on my pizza. I'm not picky, I guess I just feel like I never know what's in it and avoid it.
Where does he get the meat processed? Maybe you could have them talk to your husband about the joys of having something BESIDES fricking sausage once in a while.
Even if the sausage tastes amazing, there is such a thing as TOO much of a good thing.
My brother in law is a hunter and their freezer is full of all different cuts of meat. They make sausage and salami out of the stuff that's small and not a roast or whatever. They mix things for ground meat.
All I can think of for you to do is to use it in soups, take it out of the casings for spaghetti sauce and casseroles. Depending on the spices, I guess you could use it for enchiladas, stuffed bell peppers. I don't know.
Maybe you can get rich writing a "sausage only" cook-book, but I'd be afraid to encourage him. :)
Maybe if all he gets is vegetables and some sausage every night for the next 365 days, he'll get more creative with his processing order.
Tell your husband you are proud of him, but is it okay if you get to place the processing order next time? He brings it home, you have to cook it. And he has enough sausage to last a long time. Sounds like a fair deal to me.
