What to Do with Leftover Beef?

Help! I made prime rib for my dad's 80th birthday party - turned out fabulous but I bought too big of a piece. Made steak salad but we're pretty much at the point where we don't want to even look at red meat for a few weeks -- anyone have a stew or soup recipe that incorporates beef that is already cooked? Hate to waste it; if I freeze as is I know we'll never eat it and it will just end up in the trash. Thanks everyone!

GUMBO!!!! ... Holy trinity (green peppers, onions, celery), some Cajun Napalm (dark roux), stock, meats (steak, sausage...I like andouille or linguica, shrimp, whatevers. Literally.), tomatoes (Yes. I go there.)... There are literally hundreds of gumbo recipes. I never make mine the same way twice.

Chili Time... Make whatever red chili you ordinarily make (ground beef, bison, pork, etc), and then add the steak. I suppose you could do a white chili w steak, but I'm not feeling it for whatever reason. Green has potential, though.

Fajitas... Let marinate for a wee bit in some lime juice & cilantro. Sauté up some green peppers and onions.

Stuffed Peppers... I do Cajun stuffed peppers, which is essentially gumbo that I didn't want to eat for a week or seven (froze). But any stuffed pepper recipe.

I have used leftover steak to make tacos before: just chop or shred, add some taco seasoning and done. You could just mix up the seasoning with water per directions and toss everything in a freezer bag without cooking it. Then when you are in a pinch you can just throw everything in the microwave or a pan, heat and eat.

Sure.

Shred the beef, or chop it into tiny bits. Salt and pepper the meat lightly, add a pinch of sage, chopped garlic, whatever spices you like in your stew, mix well and set it aside to let the spices soak in(unless you had a good rub in your meat, then you don't need to).

If you don't already have stock made, use a little beef base in your water. Add beef and veggies, bring to a boil.

Chopped Scallions
Diced potatoes(to save time, microwave potatoes and then dice them)
If kids like veggies, be creative.
Bay leaves(for flavour)
Potato flakes (to thicken stew).

If you want a beef dumpling soup, mix 2-1 ratio of Bisquick, and make a dry dough. Pinch off bits into boiling soup. Add potato flakes to thicken.

I also do a variation of this with leftover chicken. Shred chicken, mix in garlic and spices, chicken base, water. Boil and pinch dumpling dough, then potato flakes to thicken. Goes great with a nice loaf of bread.

L., HAPPY BIRTHDAY TO YOUR DAD!!!! Wish i could get some prime, too big of a piece & it last more than 2 minutes!!! This is my crock pot recipe>> Since the meat is already cooked, put that in last. Carrots, Red Potatoes, Red Onion, Zucchini or Yellow Squash, Sweet Snap Peas, Diced Tomatoes & Green Chilies & What ever else ya wanna put in. Slow cook 3 hrs, add meat, turn heat off. Don't forget the buttermilk,& honey Corn Bread :) Thank you for sharing all your recipes!!!!!

Make your own stew. Put the meat in last after cooking your veggies.Add some potato for a thickening and a little soup... chicken or beef broth.You will really just be warming up the meat without overcooking. I'm sure it will taste great.

You can boil some carrots, potatos, and onions until soft. Season to your liking add the cooked beef last with extra water if needed. Then thicken with flour. This is a family favorite because it is easy and yummy. Especially on cold days. You could serve with some fresh bread for dipping. It is also great for reheating leftovers. LOL I am slicing up some DELISH leftover steak right now, making fajitas!!!

You could put it in a pot of homemade vegetable soup too and then freeze that.
