Hello Mamas,

I actually have two questions...

1) If you live in my area, Brooklyn, MI, do you know of grass fed cattle & chicken meat/eggs to purchase?

2) Does anyone have a good batter for Homemade Chicken Nuggets that you BAKE?

Sorry about #1...Do you have a Trader Joe's or Whole Foods near you?

#2....Dip chicken cutlets into egg white/egg substitute and coast with Italian seasoned bread crumbs for the flavor or plain is fine..use salt and pepper in the mixture and make sure evenly coated...

We make homemade chicken tenderloins, dip in egg, Italian bread crumbs, bake at 350 for about 20 minutes or until done.

My recipe for nuggets is similar to Denise, but I use a couple more spices and then a half of a ranch packet. SOOOOOO good. . . I think I'll make that for dinner tonight!
1/2 cup plain bread crumbs
1/4 cup grated Parmesan cheese
2 teaspoons Italian seasoning
1 packet ranch dressing mix
1 teaspoon salt
(the original recipe called for 1 cup butter, but I used a couple eggs.)
Chicken breasts cut up in little chunks.
Mix the dry ingredients up, wisk the eggs. Dip chicken in eggs then dry stuff. put on a pan and bake for 15 minutes at 350 then up the temp to 400 to get it a bit more golden faster.
For the little kids I didn't give them all that much ranch in them.

Can't help with #1, but for chicken nuggets:
- Thinly sliced chicken cutlets cut into "fingers"
- Lightly flour them (with a little bit of salt and pepper)
- Egg wash
- Roll them in crushed Ritz (or a similar buttery cracker)
- Bake on a parchment-lined sheet at 400 for 10 minutes, flip and 5 more minutes

** I will make a huge batch of these and freeze them!**
