Food Question- What Would You Do with It?

I was doing some 4th of July baking this weekend and I accidentally opened up a can of sweetened condensed milk when I didn't need it (recipe called for evaporated, Doh!)

I put a foil lid on it and put in the fridge.

1) How long do you think it'll keep in there?
2) Any easy(ish) suggestions on how to use it up?

So What Happened?

OK good call about transferring it to a glass bowl. So far it still looks and smells the same so I think it's still OK.

I might just heat it up to caramel consistency, and then put it on some ice cream. But the mini cheesecakes sound super easy and I've got some cream cheese.

unless you have a recipe to use it for today? Throw it out. it doesn't last long once opened.

This article (link below) is excellent. It stresses removing the condensed milk from its can and storing it in a Tupperware type container. That way, it will keep for a couple of weeks. I personally love Vietnamese iced coffee (which is coffee and condensed milk over ice, pretty much). I like the article's suggestions for combining it in a smoothie, or combining it with coconut milk to make a savory dish.

Also, if you google 3 ingredient condensed mik cookies, there are lots of results. Most call for self-rising flour, but I'll post a link to a site that uses regular flour and some leavening and salt. True, that makes it more than 3 ingredients (the 3 are self-rising flour, butter and condensed milk), but still, they seem like easy cookies.

I would make my mini fake cheesecakes. You take a package of room temp cream cheese and whip it until fluffy. Add your sweetened condensed milk, 1/3 cup of lemon juice, and a teaspoon of vanilla extract. Mix well.

You can pour it into a graham cracker crust and pop it in the fridge for 2-3 hrs or place a nilla wafer cookies in the bottom of muffin liners and pour a layer of cheese cake filling over them. Then you pop them in the fridge for 3-4 hrs until they set well.

We usually spoon blueberry or cherry pie filling on top when serving. Fast easy and always a hit.

If you have a non stick small sauce pan heat the stuff on very low and Will turn into a Carmel texture. Really good for dipping fruit or Graham crackers

I like those Magic bars - they have coconut in them and choc chips and nuts if you like. I usually just make at Christmas time - but they are eaten first usually.

I would trash it. I wouldn't ever use anything that's been stored in a can that's been opened. A sealed container would have been better.

It should keep a few days. I agree about the bars with graham crackers, various chips (chocolate, butterscotch, peanut butter or a combination), nuts and coconut. They're called Dream Bars or 7 Layer bars, they're easy, and they can be kept in the fridge or frozen.

Make dream bars! Yum! And so easy.....
Graham crackers and butter base
Choc chips
Butterscotch chips
Chopped pecans
Coconut (yuck, I usually leave that out)
Drizzle with the milk and bake

FYI - You cannot safely store any food in an opened can in the fridge so you should take it out of the can and put it in a covered dish. That said, I would search Pinterest and make ice cream with it. There are loads of recipes where you can make ice cream using sweetened condensed milk and just a couple of other ingredients; most don't require an ice cream maker!

Make a fruit salad and add this to it. Pears, apples, bananas, grapes ... NOT Kiwiis....my mum used to make this yummy dessert

I don't take cream in my coffee so I can't testify but my father in law used to "treat" himself and use it in his coffee. I agree though it should be stored in a glass container. And if that's the worst thing you did over the holiday.....it sounds like it was a great holiday indeed.

I would throw it out if you don't have a recipe you can use it in now.

Pour it into an ice cube tray and freeze. Then put cubes in a baggie in the freezer. Use for anything that needs a bit of sweetener with cream. :)
