Hi Mamas!
We made a trip to MI over the weekend to go apple picking and came home with nearly 3 dozen apples! I'm looking for yummy, easy recipes that will make it even more fun to enjoy all the apples. Does anyone have suggestions? We've made applesauce in the past, but it just doesn't get eaten fast enough.

Apple Puffed Pancake

6 eggs
1 1/2 c milk
1 c flour
3 T sugar
1 t vanilla
½ t salt
½ t cinnamon
½ c butter (I tend to use only 6 T)
3 Granny Smith apples, peeled and sliced thin
3 T brown sugar

Preheat oven to 425 degrees.

Blend eggs, milk, flour, sugar, vanilla, salt and cinnamon in a large bowl. Batter may remain lumpy. Add butter to 12 inch quiche pan or 9 x 13 and melt in oven. Add apple slices to heated pan and return to oven until butter sizzles (do not let butter burn). Remove from oven and immediately pour batter over apples. Sprinkle with brown sugar. Bake in center of oven 20 minutes or until puffed and brown on top. Serve with warm maple syrup.

In the past, and have been thinking about it recently, I have made apples with sweet potatoes and maybe raisins. Cut up the potatoes into bit size pieces and simmer in a little chicken broth until almost tender. The broth is just enough to cook the potatoes, maybe a cup. Add apples, also cut into bite size pieces. You can add cinnamon and maybe brown sugar if you like them. I usually add about a spoon of cinnamon since my family loves it. It makes a great snack or dessert with a little vanilla ice cream.

E. - you've come to the right person. My friend has an apple tree - granny smiths - and every year I go over there and pick a bunch. I make:

Apple butter (can it so it will last a year)

Applesauce (can it so it will last a year - or freeze it in small portions and take it out as needed - you can also use it as a sweetener in bread recipes to reduce the amount of oil you put in)

Apple strudel

Apple pie

Cranberry-Apple Sauce or chutney - freeze it or can it and take it out for the holidays

Apple bread w/choc chips

Apple dumplings

Other tips:

You can freeze apples to use in recipes later. Just peel and slice, put into tupperware container, then pour apple juice with a preservative in it over the top so the apples are covered, close and put in freezer. I usually cut/peel the amount for a recipe, then I write on the top of the container how much (4 cups, etc) and for what recipe.

You can also grate apple and freeze it. I grate one cup of apple for my favorite apple bread recipe, then freeze it in a ziploc bag. When I want to make apple bread, I just take out one ziploc and defrost in the microwave. If you freeze 12 bags that's one loaf a month.
