Recipes That Use Tomato Soup?

I have three cans of Campbell's tomato soup in my cupboard that are about to expire. I can't remember for the life of me why I bought them to begin with. We don't eat tomato soup by itself. Does anyone have any good recipes I could use them in? I checked the Campbell's website but I didn't see anything that grabbed me.

I have a chili recipe that uses it. It's my daughter's fav chili. (She's 11)

1.5 lbs gr beef/sausuage
1 med onion, diced and divided in half
1 can black beans
1 can Bush's chili beans
1 can tomato soup
1 can diced tomatoes w/green chiles
1 can diced tomatoes w/sweet onions
3 TB chili powder
1/2 tsp Lawry's seasoned salt
1/2 tsp pepper

Brown the ground beef and half the diced onion with the chili powder, Lawry's and pepper. Drain.
Stir in everything else (including the remainder of the onion), and bring to a boil. Simmer for 10 minutes.
Yum.

I would use it as a base for vegetable beef soup made in the crock pot. You could brown some ground beef and onion and throw it into the crockpot. Then add the soup with a can of water, dice up some carrot, celery, potato, some beef broth if you have some, if not just add some water, and season this however you wish. Hm. I might make this tonight! :)

Easy Goulash:

Brown a pound or two of gr beef-drain oil, add a chopped onion or two, peel 3 or 4 whiterose potatoes and chop into bite sized chunks and add along with several carrots chopped into bite sized chunks. Pour in your cans of soup and enough water to cover all the ingredients. Salt and pepper to taste, and I usually put a little cayenne in ours. It's good stuff. Oh, simmer until veggies are tender. This goulash is always even tastier on day 2. I like the broth semi thick.

I would probably make a vegetable soup and use it as the base. But we usually serve it with grilled cheese sandwiches.

And Jubee, tomato soup does NOT belong in a shepherds pie!! LOL

this is basically a spice cake, & in 20+ years....not a single soul guessed the "mystery ingredient"! Enjoy.....

or you could just toss some vegies & meat into it & make soup!

I have 2 recipes I use it for.

Sloppy Joes: brown ground beef and onion, drain fat. Add a can of tomato soup, some Worstershire sauce, some salt and pepper and about half a can of water. (I also add a lil ketchup and mustard) EVERYONE loves this!

Casserole: (my mom used to make this when I was a kid and now my kids love it) brown ground beef, drain fat. Add a can of tomato soup and a can of green beans. Pour into a casserole dish (8X8 or 9X9 if only using 1# of gr. beef) On top of beef/bean mixture, add mashed potatoes (instant work great, and I use flavored instant) On top of mashed potatoes, add a layer of American cheese. Bake for about 30 min on 350*.

I've also had tomato soup in chili...it was...different! haha!

My mom used to make hamburger pie using tomato soup. Basically, get a frozen pie crust (two)...lay one down in a deep dish pan or casserole, fill with browned ground beef, 8 oz. cheddar cheese, a can or bag of corn, and the tomato soup. Seal with second pie crust, add slits on top, and bake! I know it sounds a little weird, but it is DELICIOUS. I'm sorry I don't know how long to bake it...but since your meat is already cooked, I would follow the instructions on the crust for a filled pie.

Or you can do grilled cheese and tomato soup. Family favorite here...(we use Amy's tomato bisque, I add a bunch of diced tomatoes, and we make our sandwiches with a variety of cheese.) YUM!! Now I want a grilled cheese sandwich!

Roman Holiday Casserole From Harold Reiley , aka Chef Tell!! ♥ you Harold!!

1 pound Ground Beef
3 Green Peppers, cut into strips or chunks
2 Onions, cut into strips or chunks
(my family does NOT like this many so I adjust)
3-4 Cans of Tomato Soup (DO NOT ADD MILK) (I use Low Sodium)
1 Mid sized pacakge of Velveeta, grated
1 Box (1 lb.) Elbow Macaroni

Brown Ground Beef with with peppers and onions. Drain grease.

Add tomato soup and Velveetta. (Adjust Soup to the amount of beef or if your family likes “saucier” add more soup!)

Large elbow Macaroni – Cook as directed on package. Drain Mac and throw into Meat/soup mixture. You can put into crock pot to keep warm, bake in oven, or serve. This is another I like it better the next day!!

When I have a tomato based anything and I want to use it up, I use it in something where tomato is a base, like spaghetti sauce, or taco meat, or chili.

When I typically make spaghetti, I use one can/jar of spaghetti sauce and the an equal amount of so other tomato based sauce, like tomato soup or enchilada sauce. Then I add my spices like celery leaves, diced onions, etc

The dates on your cans are not expirtation dates. They are "best if used by" dates. So you can use them and be more than just safe for several years.

You could make a skillet shepard's pie.

Brown ground beef with onion. Drain fat. Add diced green pepper, red kidney beans (drained and rinsed), and a cup and a half of corn. Stir in one can of tomato soup (do not add water). Heat until hot and bubbling. Put on a layer of cooked mashed potatoes (I use Simply Potatoes Country-Style Mashed, heated in the microwave) and some shredded cheddar cheese. Put under the broiler until the cheese is melted (approx 3 min.).
