Casserole Recipes That Your Family Loves

Hello moms,
I am wondering what your favorite casserole recipe is. My family and I are sick of eating the same things over and over again. I also want to get away from cooking out of a box but when I look through cook books and choose a recipe to cook for dinner it get expensive.
Please share your quick, cheap and easy recipes with me

Quiche

5-6 eggs
2 cups water
2/3 cup powdered milk
2/3 scoop whey powder
5-6 tsp lemon juice
a bit of pepper
6 green olives (thinly sliced)

mix well

add:
1-2 cups cooked Quinoa (very filling!)
1 package thawed/drained spinach
1/4 lb Feta Cheese (Ok, I really had to guess how much cheese in a lb)

bake at 375 for 40-60 minutes

sprinkle cheese on top for 7 minutes (cheddar/Parmesan)

let cool. Enjoy.

you can do a pie crust instead of the quinoa if you want. My kids LOVE the idea of breakfast pie. Sometimes I add pork leftovers.

I like hamberger casserole (shephards pie) You just cook about 1/2 lb of hamberger type meat, put a can of green beans in it, one can of tomato soup, salt and pepper to taste. MAke real, or flake mashed potatos. put hamberger stuff in bottom of a casserole dish, put potatoes on top. put shredded cheese enough to cover on top of that. Put in oven for 20 min at 350

This is my favorite casserole dish. It's on the healthy side with the veggies, and lite on the rice. This is very popular this time of year when all of the veggies are ready. Very yummy and my 3 and 6 year old LOVE it!

Zucchini Dump

3 cups chopped fresh zucchini
1 medium size onion
1 pound hamburger
1 large can of diced tommatos
1 cup long grain (non instant) rice
1 tablespoon Olive Oil

Preheat oven 350. Ground Hamburger and drain in pan, set aside. Whipe out pan with papertowel and add your olive oil. Medium heat works perfect for me. Add zucchini when the pan is hot, let cook about 5 minutes and add chopped onion. Let it cook untill the onions become softer (usually another 2-3 minutes), then add your can (yes juice and all) of tomatos. Let all of the flavors come together and cook for another 2-3 minutes. When ready add half of the zucchini mixture to the bottom of the pan/casserole dish. Then cover with the hamburger on top. Next layer is the rice, just sprinkler it all over. Then the top layer is the rest of the zucchini mixture. Cover with Foil, or lid to dish and let cook for 45 minutes. You can salt and pepper the top if you like. This is delicious, and very simple to do. Good luck!

Mexican casserole is great, and simple.

needed:
3 chicken breasts
1 can cream of mushroom soup
1 can cheese soup
1 can cream of chicken soup
small onion (optional)
bell pepper (optional)
1 package of shredded mexican cheese
8 to 10 small flour tortillas

Start by cooking chicken breasts,(however you like,grilled, pan-fried, baked, whatevs) and slice up.

Combine soups, and set aside.

(Optional) saute onion and green peppers and set aside

Layer flour tortillas on the bottom of a casserole dish(make sure to grease the pan first) then layer sauce, chicken, onions and peppers, and mexican shredded cheese blend.

Add another layer of tortilla, and repeat process.

Bake for 30 minutes at 350.

I also ad frozen spinach that has been thawed and drained to the mix, it adds nutrients and is a good way to get kids to eat the stuff.

This isn't a casserole, but it is quick, easy and my family loves it.

Hamburger soup:

Brown one pound of hamburger in your biggest pan. Chop and add all the veggies that need used up from your fridge--whatever you have, including things like kale or collard greens. Add one can tomato product (I usually use a can of tomato sauce), and a tablespoon of Italian seasoning. Cover with water (just add enough to cover the veggies) and simmer until veggies are soft. Salt and Pepper to taste. We love this, and I usually make about two gallons of soup with one pound of hamburger--and freeze a lot for later. ONe of my favorite combinations for veggies is carrots, zucchinni, onions, potato and garlic--but I have used sweet potatoes, kale, peas, corn, celery, etc... in various combinations. It is a great way to use up fresh veggies--which are so abundant this time of year!

One of our favorites is "pizza casserole".

1 lb sausage
1 jar spag sauce (32 oz)
8-12 oz shredded mozeralla cheese
sliced pepperoni
sliced mushrooms (if your kids like them)
Shell macaroni noodles (8 oz)

Prepare noodles per pkg directions. Brown sausage. Mix noodles, sausage and spag sauce and pour into 9 x 13 baking pan (I spray with PAM). Generously cover with cheese. Layer pepperoni slices on top. Bake at 350 for 30-35 minutes.

I know of a easy yummy chicken casserole recipe.
Ingredients:
1 lb of sliced up chicken (how much chicken depends on how much you want in the casserole)
1 can of Cream of mushroom
1 can of Cream of Celery
1 can of evaporated milk
1 package of egg noodles, not spaghetti noodles, you can use elbow noodles
1/2 a block of cheese
some type of potatoe chips (you don't have to have the chips, but it makes the casserole have a slight crunch to it)

First cook the chicken, to almost done. The chicken will finish cooking in the casserole. Then mix chicken, cream of celery, cream of mushroom and evaporated milk, grate half of the cheese straight into the mixture. Save half the cheese for the top of the casserole. Add pepper and salt if you like. While cooking the chicken, cook the noodles 8 to 10 minutes. Then mix the noodles in with chicken and soup mixture. Then place in a big glass or metal casserole dish. Glass cooks the casserole differntly then metal, experiment, it turns out good either way. After poring the mixture with noodles and chicken into the dish, grate the rest of the cheese onto the top of the casserole with crunched up chips. Then cook in oven at 350 for 10 to 30 minutes depending on how long you cooked the chicken. This is a really yummy recipe. You do get leftovers if you don't eat it all, which usually my children do eat the whole dish, because they love it to much. Anyhow, good luck.

Ground Beef Wild Rice Casserole

1 lb Ground Beef
1 onion
1/2 tsp garlic powder
salt and pepper to taste
1 cup chopped celery
1 chopped green pepper
1 cup rice - cook the rice
1 cup wild rice- again cook the rice
2 cans cream of chicken soup
1/2 cup water
shredded cheese on top

Fry the meat and veggies together and combine the cooked ingredients in a casserole dish. Bake in 350 over for 35-45 mins. Covered. Serve with some other veg, there is not enough in this meal to consider a veg portion, or just add mixed veggies to the casserole. You can also just use 2 cups regular long grain rice instead of wild rice, but the wild rice give it a nice texture. I have done it both ways.

Do you have a broccoli Chicken casserole recipe yet? I'll grab mine and get it to you. A little later, but we all love it. And my husband swears he's allergic to vegetables! HAHAHAAAA!!

Sloppy joes: 1 lb ground beef, 1/2 to 1 onion, 1 can tomato soup, about 1/4 cup bbq sauce, Mrs. Dash to taste (1/8 to 1/4 tsp or so). Brown ground beef & onion, add soup and bbq sauce and seasoning and a bit of water, simmer for 10 minutes. Serve on hamburger buns; also great on baked potato or rice. Add a veggie or green salad on the side.

Tater topped fish bake:
1 lb fresh/frozen fish (any kind works, I love Orange roughy but any white fish works)
1 can cream of celery or (cream of mushroom) soup
1/4 c milk
1 package frozen califonia mix veggies (16 oz)
1 package frozen tater tots
Cheese (1/2 lb, grated)

thaw fish and veggies. Spread veggies on the bottom of square (9x9) baking pan. Lay fish over the veggies. Mix milk, cream of celery soup, and 1 c of the cheese together. Spread over fish & veggies. Spread tater tots over the mix. Bake at 425 for 20 minutes. Sprinkle the rest of the cheese over the top and bake an additional 5 minutes.
