Something Easy with 1Lb of Hamburger?

Anyone have good ideas for easy, yummy meals with 1lb of hamburger? I have potatoes also, and rice. We don't do meatloaf, and we do spaghetti often. I'm looking for something simple, with simple ingredients, but not a food you think of to make every day :-)

My husband's family has a recipe they call 'mess'. You take the cooked, drained ground beef, add cooked, drained 8 oz. egg noodles, 2 cans tomato soup, and 1 lb of velveeta OR 2 c shredded cheddar plus garlic powder and pepper to taste. Serve with garlic bread or rolls or cornbread.

what a coincidence, i had this exact same situation tonight. i was SO not in the mood for cooking...

i cut up a few potatoes into bite sized pieces, boiled them until they were tender. meanwhile i browned the hamburger in a pan. when the hamburger was done i added a can of corn and some cream of mushroom soup. then last i added the cut up potatoes. it took about 30 minutes tops. i also added s&p and some minced onion to taste. it was purdy good!

brown meat w/onions & garlic add frozen corn, black beans
can of original rotel tomatoes, package of taco seasoning mix, mild red enchilada sauce mix it all together break up some taco shells ( tortilla chips) in your meat mixture mix it all up then dumped it all into a 13x9 glass dish topped it off w/mild shredded cheddar cheese & black olives baked til bubbly then served w/sour cream.

if you don't have a can of rotel using a jar of salsa works great; if you don't have enchilada sauce you can use a can of tomato soup

Cook your rice

Brown the meat with onion
drain the fat

Place 2 TBLS of peanut oil in skillet, add the cooked rice 1 scrambled egg, 1/4 cup soy sauce, shredded carrots, diced celery, green onions. Stir in the beef..

Carne Guisada
Brown 1 to 2 lbs, ground beef or sliced Sirloin steak
1/3 cup chopped onion
1 clove garlic crushed
1/4 tsp. Cumin
1 tsp salt
1/4 tsp black pepper
2 TBLSP a;ll purpose flour
1 can -m whole canned tomatoes (crushed) with liquid .
water or beef broth

Brown meat in skillet with onion, garlic, cumin, salt and pepper. Cook till onions are opaque.
Remove meat mixture to a bowl and set aside.
In the same skillet. heat 2 TBSP flour, cook and stir until the flour turns beige in color: remove skillet from heat. To flour mixture, ad crushed tomatoes with liquid and enough water to make 3 cups: stir well to dissolve flour: return skillet to heat and bring to a simmer. Partially cover skillet and simmer Carne Guisada for about 30 minutes, stirring occasionally. Continue simmering and stirring occasionally. Continue simmering and stirring until meat reaches desired tenderness. The sauce will cook down to a thin consistency. Serve with rice, mashed potatoes or in flour tortillas.

This is my family's favorite way to eat ground beef or ground venison.

Make a batch of cornbread batter - 1 cup each flour and corn meal, 1/4 cup sugar, 5 tsp baking powder, 1/4 tsp salt, 1 egg, 1/4 cup melted butter, 1 cup milk. Add to the batter a can of creamed corn and several chopped jalapenoes.

Grate 2 cups cheese - I like half extra sharp cheddar and half Monterey jack.

Brown the ground beef with onions, bell peppers, celery, and garlic. Add a can of refried beans and a can of ro-tel tomatoes. Spice with cayenne, chili powder, cumin, and paprika. Cook until tomatio liqiod is reduced.

Put half the batter in a DEEP greased cast iron skillet or Dutch oven. Add the meat mixture and half of the cheese. Top with remaining batter and cheese. Bake at 325 until top is browned. You can't use the knife test to see if it's done - the knife will appear wet even when it's done because of the creamed corn.

Chili - brown the meat, add a can of diced tomatoes and a can of pinto beans or kidney beans, and some chili seasoning, and heat through. Make as spicy or as mild as you like. Top with shredded cheddar cheese and/or sour cream and serve with corn bread.

Cook ground meat, add chopped onion, celery, garlic, and peppers if you wish. Cube about 5 - 6 potatoes (peeled or unpeeled), slightly cook them with a drop of oil, then add water and beef flavoring of your choice. All goes in one pan one after another. Simple & tasty.

Brown the meat

I use another pan for this part: saute chopped onions in olive oil, green peppers (optional) & garlic).
Add the cooked grd beef, add 1/2 cup beef stock, 3/4 cup tomato sauce, cover & cook med low heat 15 mins.
Add dice potatoes (2-4 sm potatoes), cover & cook another 15 mins
Add can of kidney beans (i don't drain...you can add a can of blk or green olive w/juice if you want) cook addtl 15 mins uncovered.
Check potatoes are done.
Then serve over white rice! Enjoy!

Brown the hamburger and drain, then add 3-4 cups of milk, 2 cup uncooked noodles like macaroni,2 cups shredded potatoes, any kind of canned or frozen veggie, 1 pack of shredded cheese, 1/2 tsp pepper, 1 tsp salt, bake at 400 degrees for about an hour. = simple yummy casserole. We eat it all the time. You can also use italian sausage, chicken or ham!

Hi K.,

Here's one of the easiest recipes I have that my whole family loves.

Taco Salad

Brown the hamburger, drain and put in a bowl.
Add shredded cheese to taste
Add Nacho Cheese Dorritos - broken up into bite size pieces
Add black olives - optional
Add avocado - optional
Mix with Catalina dressing (to your desired level of wetness)
Serve warm over iceberg lettuce mix(with carrots, cabbage, etc).

My kids love it and always take for lunch the next day.

darn - i was gonna say meatloaf...

make them into patties and have salisbury steaks with mashed potatoes or rice....

if you have a butternut squash - peel it and cube it - fry up the hamburger with chopped onion..steam the butternut squash...add brown sugar or maple syrup to taste!! YUMMY!!!

Hamburger Skillet: Brown 1 lb hamburger. Add 2 pkgs top ramen noodles with seasoning packet. Add about 2-3 cups water. Cook for 5 min. Add 3 cups frozen vegatables and cook for another 5 min. Serve alone or with some ketchup.

Sloppy Joes: Brown 1 lb hamburger, 1 c. chopped onions and 1 c. chopped celery in 1 Tbsp oil. ( I usually brown the celery and onions a L. first and then add the hamburger to brown) Add 1 Tbsp prepared mustard, 1 Tbsp. vinegar, 1/4 tsp pepper, 1/8 tsp cloves, dash of salt and 1 c. ketchup (I use a L. more ketchup). Stir. Cover and simmer 30 min. Serve on toasted hamburger buns or baked potatoes.

Green burgers

Throw some veggies in your food processor - spinach, kale, onion, garlic. Be creative. Puree and then work veggies into meat. Pat meat into burgers or meatballs and cook. Pan fry or grill burgers. You can bake the meatballs in the oven, but be sure to use a cookie sheet that has sides. At least I have one meal where I don't have to pester the kids to eat their veggies. I usually top with cheese.

Tostadas!

Cube your potatoes into small cubes, brown ground beef with the small cubed potatoes, a minced garlic clove, some chopped onion.
When the beef is browned, add a can of tomato sauce and either some salsa/chile (if u have some pre-made) or a can of El Pato Sauce (add only as much as you'd like. The more you add, the spicier it will be).
Add a can of corn and let it simmer so the potatoes can finish cooking. (Maybe 10mins or so)

Put this on a tostada and enjoy with whatever fixings you like. My family uses lettuce, sour cream, cheese on this. Sometimes we spread refried beans on the tostada first if we have any.
You can add fixings like avocado, sliced steamed zuccini, sliced steamed carrots, sliced fresh onions, and fresh tomatoes if you have any. It's super easy and yummy!

Tator tot casserole - lots of recipes online, I think I brown meat/drain, mix with can creamed corn if you have it, can cream mushroom OR cream chicken soup, 1/2 to 1 cup milk, pour in 9x13 top with 1 bag tator tots bake 30 min at 350
Noodle casserole - brown/drain meat, cook 1 bag egg noodles, mix meat with 1 can cream mushroom soup, 1 can corn (with liquid in it), L. bit of milk, add noodles, cook 350 30 minutes

When I hear hamburger and rice, I immediately think: Add some tomato sauce and make stuffed peppers! You can boil the potatoes then mash them and VOILA! One of our fave meals for SURE!

I like to make a dish called Hamburger Gravy over Rice, just something I made up but it's similar to the Salsbury Steak they used to serve in the cafeteria in school. You just brown the Hamburger,drain it then add a can or two of Cream of Mushroom soup, depends on how much you want to make, add a can of milk simmer to bring all the ingredients together, add garlic, onion, and mushrooms if you like to give it an even spicer flavor. Pour over Rice or Noodles add a vegetable and you've got a well balanced meal.

Our family go to is tacos but everyone knows how to make tacos, right? They also love meatballs: bread crumbs, onion or onion powder, 1 egg and whatever spices you feel like. We bake them so they are not as greasy. I prefer ground turkey but beef is good too. If you have a lot extra you can even freeze them. My kids love them. We dip them in ketchup or sweet and sour sauce.
