What will be on the nachos? If you're having meat, cheese, guacamole and pico de gallo I'm not sure you really need a side, it's kind of a meal unto itself :)

I like the Lipton rice (baby back ribs and fajita). You can do a salad on the side. Our nachos is ground beef with taco seasoning (reduced salt), then mix in fat free refried beans. I like it more wet than stiff. Take half the bag of chips and layer the pan, add half the meat mixture, and spreading 2 cups of Mexi cheese. Then another layer on top exactly the same. Put in oven for 10 minutes to melt cheese. We like 2 layers to be sure there's plenty of meat and cheese throughout.

Load up the nachos with lots of goodies and serve with fresh fruit on the side.
