What Do You Serve With??
I'm going to TRY roasting veggies Thursday night for fajitas....what do you serve with yours?
I have refried beans, black beans, Spanish Rice....sour cream - home made guacamole.....
I can switch it up...willing to try new things....any advice would be appreciated!!

Well, Fajitas are traditional Tex-Mex served in every restaraunt around here. Always with rice, beans, pico de gallo, and of course, chips and salsa.
Usually sour cream and guac are an add-on. The traditional Mexican places dont give you shredded cheese, but the Tex Mex ones do. You need Pico!
Pico De Gallo
small diced tomatoes, onions, cilantro, minced garlic and fresh jalapenoes if you like, and salt and pepper. A little splash of vinegar or squeezed lime juice to get the flavors to mingle. This is better if it sits a few hours, but no longer than overnight.

Red rice & refried pinto beans (I usually do green rice and black beans with most of my other mesoamerican cooking, but for fajitas, I'm just "locked into" red rice and refrided pinto beans. NOT ONLY THAT...hehehe... but I don't make them It's cheaper for me to pick them up from the mexican restaurant down the block than to either make from scratch or buy canned. So I just jaunt down and do a 'family order'. Bueno!)
Pico de Gallo (chopped tomatoes, *white* onions, garlic, jalepenos, salt, PEPPER -quite a bit-, and 1/2 lemon juice, 1/2 lime juice).
Avacado slices (I make wicked guac, but prefer slices for fajitas)
Shredded cheese
Sometimes blue corn muffins. Habanero blue corn muffins for adults, sweet blue corn muffins for kids and "me" ;)

I usually make beef fajitas.
- Skirt Steak (or flank steak, but skirt steak is better)
- Santa Maria Seasoning http://shop.scottsfoodproducts.com/Santa-Maria-Seasoning-... $3 from whole foods
- Lime juice (1 cup or more, enough to cover, adding a little water if I'm low)
- Chopped purple onion (1)
- Cilantro chopped INCLUDING STEMS (1/2 a bunch)
- Olive Oil (just a splash)
Season the steak, and marinate w/ the rest for 1-4 hours (I'll often buy 2 skirt or flank steaks, reserve one, and when I pull the first out, pour the marinade in a ziplock freezer bag, add the second steak, and toss into my freezer).
Grill or Broil until center is 125. Let rest for 10 minutes (comes up to 135 / medrare). Slice into thin strips.

I LOVE fajitas!
What I made for kids before was the meat, salsa, guac, sour cream, strips of bell peppers, cheese, onions (cooked or not), lettuce, beans, rice. You can do corn, green onions, tomatoes, really anything =)

we had fajitas last night.
Dad sautee'd green bell pepper, red onion, and garlic.
We also had:
black & pinto beans
fresh salsa
monterey jack cheese
tomatillo salsa
a little pico de gallo kind of made from diced zuchinni, fresh corn, black beans, tomato, salt & pepper with a little lime juice, served chilled
Mom made a side of hominy. Not sure what she put in it. It was warm, probably tossed with cheese and heavy cream. It looked like cream corn (yuck) but tasted wonderful.
I didn't even bother with the tortilla - I gobbled it all up with a fork so that the yummy flavors could touch my tongue first - not the boring tortilla.
